Use any firm-fleshed fish fillets such as halibut, branzino, haddock, cod, or salmon. Buy a good brand of commercial black bean sauce, such as Sun Luk or Kikkoman, and add some garlic and ginger to it. Sauces vary in saltiness, so taste before adding additional salt."

6 pieces boneless salmon skin intact
2 inches fresh ginger finely chopped
1 tablespoon rice wine or sake
2 1/2 tablespoons black bean garlic sauce
2 cloves garlic finely chopped
1 1/2 inches fresh ginger finely chopped
1 1/2 cups Chicken Stock
2 1/2 tablespoons soy sauce
3 tablespoons rice wine or sake
1 tablespoon sugar
1 tablespoon cornstarch
1 1/2 tablespoons canola oil
4 scallions finely chopped

Steps:

  • "1. Set the oven at 450 degrees. Line a rimmed baking sheet with parchment paper. 2. In a bowl, combine the salmon, ginger, and rice wine or sake. Set the fish on the parchment, skin side down. 3. In a bowl, combine the black bean sauce, garlic, and ginger; set aside. 4. In another bowl, combine the chicken stock, soy sauce, rice wine or sake, sugar, and cornstarch. 5. In a skillet, heat the canola oil until very hot. Add the black bean sauce and cook, stirring constantly, for 1 minute. Add the chicken stock mixture and cook, stirring, for 3 minutes, or until it comes to a boil and thickens; cool. 6. Pour the sauce over the fish and transfer to the oven. Roast the fish for 14 minutes or until it is opaque in the center. Transfer to plates and sprinkle with scallions. NOTE: check for doneness after 10 minutes - 14 minutes seems like a lot at 450."

1 head Savoy cabbage, (about 1 1/2 pounds), cored and cut into 1-inch squares
4 teaspoons canola oil
2 tablespoons Shao Hsing rice wine, or dry sherry (see Tip)
4 teaspoons black bean-garlic sauce, (see Tip)
1 bunch scallions, minced
2 teaspoons distilled white vinegar
2 teaspoons toasted sesame oil
5 dashes hot sauce, or to taste

Steps:

  • Preheat oven to 500 degrees F. Toss cabbage and canola oil in a large roasting pan and spread out in an even layer. Roast until beginning to wilt and brown, about 15 minutes.
  • Combine rice wine (or sherry) and black bean sauce in a small bowl; drizzle over the cabbage and toss. Continue roasting until tender, about 5 minutes more. Toss with scallions, vinegar, sesame oil and hot sauce until combined.
