Pitha is a spicy dish made from rice flour and spice bengal gram, eaten generally for breakfast or snack with tea. This dish has its origin in Bangladesh and is a favorite cuisine in the North-eastern region of India.

Number Of Ingredients 18

2 cups Boiled and mashed potatoes
3 tbsp Oil
2 tbsp Peanuts
½ tsp Cumin Seeds
½ tsp Turmeric powder
½ cup Fresh Green Peas
½ tsp Coriander powder
½ tsp Amchur Powder/ Chaat Masala powder
Handful of chopped Coriander leaves
Salt to Taste
3 cups Rice Flour
½ tsp Salt
3 cups Boiling Water
2-3 tbsp Oil
¼ tsp Hing (Asafetida)
½ tsp Mustard Seeds
Few Curry leaves
Slit Green Chillies

Steps:

  • Heat 3 tbsp oil in a kadhai. Add 2 tbsp peanuts and fry on low flame until skin starts to split. Remove fried peanuts from oil.
  • In the remaining oil add ½ tsp cumin seeds and let it splutter. Lower the flame and add ½ tsp turmeric powder and mix well. Add ½ cup fresh green peas, ½ tsp coriander powder. Cover and cook until peas turn soft.
  • Add ½ tsp amchur powder or chaat masala powder to the peas and mix well. Add 2 cups boiled and mashed potatoes, fried peanuts and salt to taste. Mix well and saute for 2-3 minutes. Add handful of chopped coriander leaves and mix well. Potato filling is ready. Cool completely before stuffing.
  • For Dough: Shift 3 cups rice flour. Add ½ tsp salt and mix well. Add 3 cups of boiling water and gradually mix well. Cover and let it rest for 5 minutes. AFter 5 minutes, grease hand with ghee and knead to a smooth dough.
  • To make pitha, grease hands and take small portion of dough and make it a smooth ball. Make a cavity in the ball and eventually shape it like a bowl. Fill in the potato mixture and seal the edges completely forming a ball. Pitha can be made in elongated shape as well. If there is crack in the shapes then seal it with some dough and water. Make all the remaining pithas of your desired shapes.
  • Add prepared pithas to the boiling water. Do not overcrowd. Cook for 5 minutes. Pithas starts to float on water which means it is cooked. Remove from water carefully and cook the remaining pithas.Potato Stuffed Rice Pithas are ready to Enjoy...
  • For frying pitha: Heat 2-3 tbsp oil in a pan. Add ½ tsp mustard seeds, ¼ tsp hing, slit green chilies, ¼ tsp turmeric powder, few curry leaves and mix well. Remove chilies from oil. Now add cooked and sliced pithas. Fry it on one side for 1-2 minutes. Flip and fry for another 2 minutes.Fried Pithas are ready to Enjoy.....
