My family loves plantains, therefore, this bread is a hit in my household.

Number Of Ingredients 9

2 large very ripe plantain bananas (they should be more black than yellow)
1/2 cup(s) melted butter
1/2 cup(s) milk
4 large eggs
2 teaspoon(s) vanilla
1 1/2 cup(s) sugar
2 1/2 cup(s) whole wheat flour ( i use freshly ground)
2 teaspoon(s) baking soda
2 teaspoon(s) baking powder

Steps:

  • Slice the plantain. Place in a food processor with melted butter, sugar, eggs, vanilla & milk.
  • Process until plantains are mashed & mixture is well combined.
  • Add combined dry ingredients & process until well combined.
  • Pour into well greased 9x13 baking pan.
  • Bake at 350' for about 40 minutes or until toothpick inserted comes out clean.

2 large plantains, peeled and broken into chunks
2 eggs
1 tablespoon olive oil, or more to taste
salt to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat or parchment paper.
  • Blend plantain, eggs, olive oil, and salt in a food processor until smooth, scraping down sides occasionally. Spread plantain mixture into a rectangle about 1/2-inch thick onto the prepared baking sheet; sprinkle salt over the top.
  • Bake in the preheated oven until bread is lightly browned and holds together, about 15 minutes. Cool on pan for about 5 minutes before slicing with a pizza cutter.
