This chili won 1st. place in a chili cook-off when I worked at the telephone company. It is my own original recipe and one I am very proud to share! This is a big batch of chili and fills a 6.5 quart crock pot. Don't let the list of ingredients and steps scare you... It is really easy to prepare and fun to make.

3 pounds lean ground beef 1 pound Italian sausage (links, spicy, pulled out of skins) 1 can (10 ounce) diced tomatoes (with green chilies I use Walmart brand or you can use Ro-Tel) 1 can (14.5 ounce) stewed tomatoes (Mexican style tomatoes, I use Hannaford) 1 can (14.5 ounce) diced tomatoes (Italian style, Hannaford) 2 cans (6 ounces each) tomato paste ( roasted garlic Italian tomato paste) 1 onion, large (chopped) 4 teaspoons fresh garlic, chopped 2 teaspoons dried celery flakes 3 teaspoons ground cumin 3 tablespoons paprika 4 teaspoons chili powder 4 bay leaves 3 tablespoons Jalapeno juice (from jar or can of jalapenos) 1 teaspoon hot sauce (Frank`s) 6 chicken bouillion cubes (dissolved in 1/2 cup water) 3 teaspoons unsweetened cocoa powder (Hershey's) 2 teaspoons granulated sugar 2 cans (40 ounces each) red kidney beans (I used dark) 1 tablespoon all-purpose flour 1 tablespoon cornmeal 3 tablespoons water

Steps:

  • Brown ground beef and sausage (removed from casings) in frying pan. When cooked through, put in crock pot, draining off grease. To the frying pan, add onion, garlic, 1 can of Mexican tomatoes, and cook on medium heat, until onions are done, about 10 minutes. Add all other tomatoes, tomato paste, cumin, chili powder, paprika, bay leaves, celery flakes, jalapeno juice, Frank's Red Hot sauce, and cook for 1/2 hour on medium heat. Add bouillon dissolved in water, cocoa and sugar. Stir well, then add kidney beans. Cook on high for 8 hours in crock pot. About 20 minutes before ready to eat, stir together the flour and cornmeal. Add hot water and mix well. Stir into chili mixture, and cook for 20 minutes. Pull out bay leaves before serving. Serve hot.

2 tablespoons olive oil
2 pounds ground beef
2 stalks celery, chopped
1 onion, chopped
1 green bell pepper, chopped
3 (14 ounce) cans stewed tomatoes
1 (10 ounce) can diced tomatoes with green chiles (such as RO*TEL)
1 (14 ounce) can tomato sauce
1 cup water
2 (1.25 ounce) packages chili seasoning (such as McCormick® Mild Chili Seasoning Mix)
1 (14 ounce) can kidney beans, undrained
1 (14 ounce) can pinto beans, undrained
salt and ground black pepper to taste
1 tablespoon white vinegar, or more to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat. Press ground beef into the hot oil to form one large patty; let the bottom brown, 8 to 10 minutes. Stir and break the ground beef into crumbles and cook until no longer pink, about 5 more minutes.
  • Stir celery, onion, and green bell pepper into ground beef and cook until onion is translucent, about 5 minutes; pour in stewed tomatoes, diced tomatoes with green chiles, tomato sauce, and water. Break apart large chunks of stewed tomatoes. Stir in chili seasoning.
  • Mix kidney beans and pinto beans into chili, season with salt and black pepper, and bring to a boil. Reduce heat to low and simmer for 1 hour. Mix vinegar into chili.

  • In a large pot over medium heat, heat oil. Add onion, pepper, and celery and cook until softened, 5 minutes. Add in tomato paste, stirring constantly until darker in color, about 2 minutes more. Add ground beef and cook, breaking up meat with a wooden spoon, until no longer pink, about 6 minutes more. Drain fat and return to heat. Add chili powder, cumin, and garlic powder, and season generously with salt and pepper. Pour in crushed tomatoes, then fill can halfway with water, swirling to catch any remaining tomato, and add to pot. Add beans and their liquid and stir to combine. Bring chili to a boil then reduce heat to low and let simmer until flavors meld and liquid is slightly reduced, about 40 minutes. Taste and adjust seasonings as necessary. Serve chili topped with cheddar and green onions.
