unsalted butter, softened to room temperature

sundried tomatoes, finely chopped

1/4 c.

freshly grated Parmesan

2 tbsp.

chopped basil

Large garlic clove, minced

2 tsp.

kosher salt

Freshly ground black pepper

Steps:

  • In a large bowl using a hand mixer, mix butter until it has a whipped consistency. Combine all other ingredients in bowl and fold into butter. Transfer to a ramekin or small bowl and serve.

butter

cloves garlic, minced

1 tbsp.

tomato paste

1 lb.

baby bella mushrooms, cleaned

1 c.

cherry tomatoes, halved

3/4 c.

heavy cream

1/4 c.

freshly grated Parmesan

Kosher salt

Freshly ground black pepper

Pinch crushed red pepper flakes

3 c.

spinach

Thinly sliced basil, for garnish

Steps:

  • In a large skillet over medium heat, melt butter. Add garlic and tomato paste and cook until fragrant, 1 minute. Add mushrooms and tomatoes and cook until mushrooms are tender and tomatoes are starting to burst, 5 minutes.  Add heavy cream and Parmesan and season with salt, pepper, and a pinch of red pepper flakes, then bring to a simmer. Add spinach and cook until sauce is thickened and spinach is wilted, 5 minutes.  Garnish with basil before serving.

When oil is shimmering but not smoking, add shrimp and sear until underside is golden, about 2 minutes, then flip until opaque. Remove from skillet and set aside. Reduce heat to medium and add butter. When butter has melted, stir in garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach and cook until spinach is beginning to wilt. Stir in heavy cream, Parmesan and basil and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes. Return shrimp to skillet and stir to combine. Cook until shrimp is heated through, garnish with more basil and squeeze lemon on top before serving.
