This is a lovely gentle introduction to bolder flavours – my kids absolutely love it. And if you’re just making it for grown-ups, feel free to use mirin or sweet sherry instead of the lime juice.

1 clove of garlic
1 x 3 cm piece of ginger
1 lime
3 tablespoons low-salt soy sauce
1 tablepsoon runny honey
1 teaspoon groundnut oil
2 x 120 g salmon fillets scaled, pin-boned, from sustainable sources
1 tablespoon sesame seeds optional

Steps:

    1. For the marinade, peel and crush the garlic into a shallow bowl. Peel and finely grate in the ginger, followed by the zest of half the lime.
    2. Next, add the soy, juice from half the lime, the honey and oil and mix together well.
    3. Preheat the grill to medium and line a baking tray with tin foil.
    4. Check that there aren’t any stray bones lurking in the salmon fillets, then cut them up into 2.5cm cubes. Toss them in the marinade and leave for around 10 minutes to absorb the flavour.
    5. Thread the salmon onto 2 large or 4 small skewers (soak them first, if wooden), but don’t push the pieces too tightly together, then place onto the tray.
    6. Grill for around 8 to 10 minutes, or until beautifully glazed and cooked through, turning regularly and brushing with leftover marinade.
    7. Toast the sesame seeds (if using) in a dry non-stick frying pan until golden, then tip onto a plate and leave to cool.
    8. Once cooked, transfer the skewers to a plate and sprinkle with the toasted same seeds (if using), dunking the cubes of salmon in any that escape onto the plate.
    9. Cut the remaining lime into wedges for squeezing over. Delicious served with plenty of greens and brown rice or noodles.

1 small bulb of fennel
1 leek
3 sticks of celery
1 fresh red chilli
4 cloves of garlic
3-4 tomatoes
1 bunch of fresh thyme
440 g white fish, from sustainable sources
olive oil
1 small glass of white wine
400 g prawns, mussels or clams, from sustainable sources
extra virgin olive oil

Steps:

    1. Trim and finely chop the fennel, leek, celery and chilli, and peel and finely chop the garlic. Roughly chop the tomatoes, pick the thyme leaves and chop the fish into chunks.
    2. Gently cook the fennel, leek, celery, most of the chilli and the garlic in olive oil over a medium heat, until soft.
    3. Add 1 litre water and the wine, bring to the boil, then reduce heat and simmer until vegetables are cooked.
    4. Add the tomatoes, thyme and fish. When fish turns opaque, add the prawns, mussels or clams and simmer for 2 minutes until prawns are cooked and mussels are open.
    5. Season and serve with a drizzle of extra virgin olive oil and a scattering of fresh chilli.

    1. Make a bag for your fish by tearing off a 35cm x 45cm strip of tin foil and folding it in half across the middle. Fold three of the sides up like an envelope, sealing the edges by brushing them with a little beaten egg before folding. Leave one side open.
    2. Roughly chop or slice the potatoes, then cook in a pan of boiling salted water for 6 minutes. Drain and leave to cool slightly.
    3. Trim and chop the fennel into wedges, reserving the fronds, then finely slice the lemon. Halve the cherry tomatoes, then squash the olives and remove the stones.
    4. Place the fennel, lemon, tomatoes and olives into a large bowl with the cooled potatoes and fish. Drizzle lightly with oil, and season with sea salt and black pepper, then toss gently to coat.
    5. Carefully transfer everything to the foil bag, sprinkle in the fennel fronds, then loosely fold up the open side and pop the bag in the fridge until needed.
    6. When you’re ready to cook, preheat the oven to 200°C/400°F/gas 6.
    7. Unravel the loose side of the bag, pour in the wine, then reseal and place on a baking tray.
    8. Cook for 18 to 20 minutes, or until the fish and potatoes are cooked through.
    9. To serve, place the bag on a serving plate and gently pierce to release the steam – the tomatoes and wine will have made a delicious sauce. Delicious served with steamed broccoli or green beans.

    1. Peel the potatoes, cut into 2cm chunks, and cook in boiling salted water for 10 minutes (or use baked potatoes – scoop out the potato and discard the skin).
    2. Rub the salmon fillet all over with 1 teaspoon of oil and a pinch of sea salt and black pepper, then place in a colander and cover with tin foil.
    3. When the time's up on the potatoes, place colander directly over the pan of boiling potatoes. Turn the heat down to medium-low and cook for 8 to 10 minutes, or until the salmon and potatoes are both cooked through.
    4. Meanwhile, pick and finely chop the parsley leaves, discarding the stalks.
    5. Once cooked, remove the fish from the colander to a plate, and discard the skin. Drain the potatoes, and leave to steam dry for 1 minute, then tip back into the pan.
    6. Mash the potatoes, spreading the mash round the sides of the pan to help it cool down quickly. When the potatoes are cooled, transfer to a bowl.
    7. Flake the salmon into the bowl, add 1 tablespoon of flour, the chopped parsley and a really good pinch of sea salt and black pepper. Finely grate over the lemon zest, then mash and mix together really well.
    8. Dust a plate with a little flour. Divide the mixture into 4, then lightly shape and pat into circles about 2cm thick, dusting them with flour as you go. Put them onto a clean plate also dusted with a little flour. If you're going to freeze them, wrap them in clingfilm at this point and put them into the freezer. Otherwise simply pop them into the fridge for an hour before cooking – this will allow them to firm up slightly.
    9. Heat 2 tablespoons of oil in a large frying pan over a medium heat, add the fishcakes and cook for 3 to 4 minutes on each side, or until crisp and golden – you may need to work in batches.
    10. Serve straight away, with veg or salad and lemon wedges for squeezing over.

    1. Grating the butternut squash into the soup is a little trick I saw in Sicily. It gives it good colour and sweetness.
    2. Finely chop the onion, celery, fennel, garlic and chilli. Heat the oil in a large pan, add the onion, celery, fennel, garlic and chilli and sweat gently until soft. Add the wine, tomatoes or passata, squash and stock and bring to the boil. Cover and simmer gently for 30 minutes. Season and gently break up the tomatoes.
    3. Roughly chop the salmon and halibut and add to the pan. Add the prawns or langoustine tails, cover and simmer for 10 minutes or until just cooked.
    4. Taste the soup and season it again with salt and pepper and a squeeze of lemon juice, if necessary.
    5. Serve drizzled with olive oil and sprinkled with the chopped parsley.
