Ranch Spaghetti Pie

½ cup Ricotta cheese
1 cup mozzarella cheese
1½ cups Hidden Valley® Original Ranch® Dressing
2 eggs
8 ounces beef
8 ounces spaghetti

Steps:

  • Preheat the oven to 350°F.
  • Cook the pasta according to the package instructions and drain.
  • In a large bowl, whisk the dressing together with the ricotta and eggs and smooth. Add the meat and the pasta to the ricotta mixture, and stir just until combined.
  • Place the pasta in a 9-inch baking dish and sprinkle evenly with the cheese. Bake covered for 25 minutes. Remove the cover and bake for and additional 10 minutes or until cheese is bubbly and browned.
  • Let stand covered for 10 minutes before serving.

Easy Ranch Spaghetti Carbonara

12 ounces dry spaghetti
2 large eggs and 2 yolks, room temperature
11/2 teaspoons Hidden Valley® Original Ranch Seasoning & Salad Dressing Mix Shaker
Coarsely ground black pepper, to taste
2/3 cup freshly grated Parmesan cheese, plus more for serving
1 tablespoon olive oil
4 ounces diced bacon
10 ounces (1 pkg) frozen peas

Steps:

  • Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente.

    While the pasta is cooking, do the following:
  • Whisk the eggs, yolks, Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker, a small pinch of black pepper and cheese together in a mixing bowl. Set aside.
  • Heat oil in a large skillet set over medium heat. Add the pancetta or bacon, and sauté for about about 5-7 minutes until beginning to crisp.
  • Just before the pasta has finished cooking, add the peas to the pasta and cook for 1 minute (optional). Drain pasta with peas, reserving 1 cup of the pasta water. Add pasta to the bacon skillet over low heat. Stir to coat the pasta. Transfer pasta and bacon to a bowl, add the egg mixture and a small amount of the reserved pasta water for creaminess. Toss well to coat. Serve immediately with extra cheese for garnish.
