This is a very old recipe. I've read that butter rolls may have originally come about as a way for Southern cooks to use up biscuit dough scraps. Whatever the history behind this old-timey treat, it's one of my favorite comfort foods. Try adding finely chopped apple to the filling.

2 cups all-purpose flour
1/2 teaspoon salt
1 cup shortening
1/2 cup water
1/2 cup butter, softened (can use less)
1/4 cup sugar
1/2 teaspoon nutmeg
2 cups milk
2/3 cup sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350. Grease a large baking dish; set aside.
  • In a large bowl, combine flour and salt. Cut shortening in until mixture looks like course crumbs. Add water, and stir just until combined. Use your hands to press dough together until it forms a ball.
  • Turn out onto a floured surface, and roll dough out into a large rectangle. The dough should be rolled fairly thinly, like you would dough for cinnamon rolls. Spread butter evenly over the top, then sprinkle with 1/4 cup sugar and nutmeg. Roll up tightly, and pinch ends to seal. Cut into 12 equal slices. Place cut side down in baking dish.
  • In a saucepan, heat 2/3 cup sugar, milk, and vanilla until bubbles form. Remove from heat, and pour over top of rolls. Bake 30-40 minutes.
  • *Note: These rolls can also be made without the milk sauce if you'd like, with a little milk or cream being poured over individual servings instead.

4?½ cups all-purpose flour
¼ cup shortening
¼ cup white sugar
2?½ teaspoons salt
1?½ tablespoons active dry yeast
1?½ cups cold water
1 tablespoon vegetable oil

Steps:

  • Mix together flour, sugar, salt, and instant yeast in a bowl. Add shortening and mix well. Mix in water.
  • Turn dough out onto a lightly floured surface. Knead by hand for 20 minutes, or by machine for 12 to 14 minutes. Toss dough with vegetable oil in a bowl; cover the bowl and let proof for 1 hour.
  • Form dough into 24 rounds, and place on a greased baking tray. Cover and let proof for 45 minutes more.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden, 12 to 14 minutes.

This recipe, from reader Carole Miller Radford, originally appeared in Southern Living's November 1995 issue. Radford shared her family's favorite Thanksgiving menu, which included her wonderfully easy and delicious Make-Ahead Yeast Rolls. Our test kitchen described the dough as "excellent" and "supple," saying that it can be formed into a variety of shapes. You can make the dough ahead of time, refrigerate it, and let it rise at room temperature until doubled in size, about 1 1/2 hours. Or you can make the rolls, let them cool, and freeze them in Ziploc freezer bags. Either way, these tender, buttery rolls will be a welcome addition to any family meal. Radford says this recipe "turns out the same way, no matter what mood you're in or what the weather is." We didn't even need to butter the tops.
