4 cups summer squash
1/3 cup milk
1 (10 3/4 ounce) can cream of mushroom soup
1 egg
1/2 cup chopped onion
3/4 cup up herb flavored cornbread stuffing mix
12 -15 butter flavored crackers
2 tablespoons butter
1 cup grated cheddar cheese

Steps:

  • Cook sliced squash until tender, drain.
  • Meanwhile, gradually stir milk into soup, blend in egg and drained squash, onion, and stuffing. Toss lightly to mix.
  • Pour into a 2-quart casserole dish that has been buttered.
  • Cheese topping: Crush the butter crackers, toss lightly with the 2 tablespoons butter.
  • Sprinkle this over the squash. Top with the grated cheese.
  • Bake at 350°F for 20 minutes.

This is a wonderful, cheese-enhanced squash casserole that my husband makes from memory of his mother's recipe.

8 yellow summer squash, thinly sliced
1 small yellow onion, thinly sliced
1 egg, lightly beaten
1 cup low-fat sour cream
1 sleeve buttery round crackers (such as Ritz®), crushed, divided
2 cups shredded sharp Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart casserole dish.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add squash and onion, cover, and steam until squash is tender and easily mashed with a fork, 10 to 15 minutes.
  • Whisk egg and sour cream together in the prepared casserole dish; add squash, onions, 2/3 the crackers, and 2/3 the Cheddar cheese. Stir with a fork. Cover the squash mixture with remaining Cheddar cheese and crackers.
  • Bake in the preheated oven until cheese is melted and crackers are lightly browned, about 30 minutes.

  • Preheat oven to 400° with a rack in the top third of oven. Grease a 2-qt. shallow baking dish with butter. In a medium bowl, stir garlic powder and cayenne into heavy cream.   Arrange half of sliced squash in dish, shingling pieces to overlap. Season with salt and pepper. Sprinkle with 1/4 cup Parmesan and 3/4 teaspoon rubbed sage. Place remaining squash on top, overlapping pieces slightly; season with more salt and pepper. Pour cream mixture over squash and sprinkle with remaining ¾ teaspoon rubbed sage.  Cover tightly with foil and bake until squash is tender, about 55 minutes.  Uncover baking dish and sprinkle with cheddar and remaining 1/4 cup Parmesan. Switch oven to broil. Broil until cheese is melty and top is golden, watching carefully as broilers vary in strength, about 6 to 10 minutes.
