Instant Pot Lentils and Brown Rice is a perfect vegan one-pot dinner!  Just dump lentils and brown rice in the Instant Pot, press the button and come back to a delicious hot plate! So healthy and yummy!

1 cup brown rice
1 cup lentils
1 1/2 cups water
1 tbsp olive oil
2 tbsp Taco seasoning
1 can chopped tomatoes
1/4 cup chopped green onions (for garnish)

Steps:

  • Put brown rice, lentils, water, oil, Taco seasoning and chopped tomatoes in the Instant Pot.  Close the lid and turn the vent to a Sealing position.  Press the "Pressure Cook" or "Manual" button and set the time to 23 minutes on High pressure.
  • When the Instant Pot is done cooking, let the pressure release naturally (NR) for 10 minutes, then quick release (QR) the remaining steam.
  • Open the lid and mix the contents of the Instant Pot so everything is combined.  Sprinkle with green onion and serve.

Lentils and rice have been served together across the Middle East for centuries; they make a nutritious and satisfying vegetarian meal. This Instant Pot version is inspired by Lebanese mujadara, a variation that combines lentils, rice and caramelized onions.

¼ cup extra-virgin olive oil
2 large red onions, thinly sliced
1 cup dried brown lentils, picked over
1 cup long-grain brown rice
3 cups water
1 teaspoon salt
Lemon wedges, whole-milk plain yogurt & chopped fresh mint for serving

Steps:

  • Heat oil in an electric pressure cooker set to Sauté mode. Add onions and cook, stirring often, until softened and deep golden brown, about 30 minutes. Transfer half the onions to a paper-towel-lined plate.
  • Meanwhile, soak lentils in a bowl of hot water. Rinse rice in a fine-mesh sieve until the water runs clear.
  • Drain the lentils and add to the pressure cooker, along with the rice and 3 cups water. Lock the lid in place and cook at high pressure for 10 minutes. Let the pressure release naturally for 15 minutes, then release the remaining pressure manually. Stir in salt. Top the mujadara with the reserved onions and serve with lemon wedges, yogurt and mint, if desired.

I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. I hope you enjoy this as much as we did!
