3 tablespoons olive oil, for drizzling
1 teaspoon sea salt

Steps:

Heat oven to 200°C/fan 180°C/gas 6.
Scrub the baking potatoes, then pat dry. Slice lengthways into three. Drizzle olive oil over a large baking sheet.
Place the potatoes on the baking sheet, drizzle with olive oil, rub all over, then generously sprinkle with sea salt.
Bake for 40-45 minutes (longer for extra crispiness) turning halfway, until golden brown and tender.

Steps:

Combine potatoes with water, oil, garlic, and salt in a 10-inch nonstick skillet and bring to a simmer.
Cover skillet and briskly simmer, shaking skillet occasionally, until potatoes are tender and most of water is absorbed, 10 to 12 minutes.
Serve.
