Raspberry Swirl Cupcakes Recipe: How to Make It image

1 package white cake mix (regular size)
1/4 cup raspberry pie filling
1/2 cup shortening
1/3 cup 2% milk
1 teaspoon vanilla extract
1/4 teaspoon salt
3 cups confectioners' sugar
Fresh raspberries and decorative sprinkles, optional

Steps:

  • Prepare cake batter mix according to package directions for cupcakes. Fill paper-lined muffin cups two-thirds full. Drop 1/2 teaspoon of pie filling in the center of each; cut through batter with a knife to swirl., Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, beat shortening until fluffy. Add the milk, vanilla, salt; gradually add confectioners' sugar; beat until smooth. Frost cupcakes. Garnish with raspberries and sprinkles if desired.

Make the frosting: In a large bowl using a hand mixer or in the bowl of a stand mixer using the whisk attachment, beat butter until fluffy. Add sugar, beating on low until combined, then whip in vanilla, heavy cream and salt. (Add more heavy cream, 1 tablespoon at a time, if you’d like a thinner consistency.) Divide frosting into five bowls, adding food coloring to each and stirring, like you did with the cake batter. Place each color in a resealable sandwich bag and snip off one corner. Lay out a piece of plastic wrap. Use each bag to pipe out a line of frosting in each color, side by side. Roll up the plastic wrap, creating a tube of frosting. Twist the ends closed, then slip a star tip on one end. Trim the plastic wrap that sticks through the star tip. Pipe onto cooled cupcakes.
