0.667 cup low-fat Quark
4 tablespoons sunflower oil
1 egg
0.25 cup sugar
1.75 cups all-purpose flour
0.5 teaspoon Baking powder
3.333 cups Quark
1 cup Sour cream (approx. 20% fat content)
1.25 ounces vanilla pudding mix (or custard powder)
1 teaspoon Baking powder
3 eggs (separated)
0.5 cup soft butter (scant)
0.667 cup sugar
1 tablespoon lemon juice
2 teaspoons grated lemon zest
1 tin Mandarin orange (470 g drained weight, drained)
powdered sugar (to serve)

Steps:

  • For the dough, place the quark in a clean cloth and squeeze out the liquid. Knead to a dough with the oil, egg, sugar, flour and baking powder.
  • For the filling, mix the quark with the sour cream and stir in the vanilla pudding mix and baking powder. Beat the egg yolks with the butter and sugar until fluffy and stir into the quark mixture. Beat the egg whites with the lemon juice and zest until stiff and fold into the mixture. Stir in approx. half the mandarins.
  • Heat the oven to 190°C (180°C in a fan oven), 375°F, gas 5.
  • Roll out the pastry and place in the greased springform tin. Pour the quark mixture on top and decorate with the remaining mandarins.
  • Bake for approx. 60 minutes. Turn off the oven, leaving the cake inside to cool. Then take the cake out, remove from the tin and let cool completely.
  • Dust with icing sugar to serve.
