3/4 lb. beef round sandwich tip steaks (1/8 inch thick)
1 small onion, thinly sliced
4 (4- to 6-inch) French rolls, split
4 leaves romaine lettuce, if desired

Steps:

  • In large nonstick skillet, combine broth, garlic powder, Worcestershire sauce and pepper. Bring to a boil. Add steaks and onion; cook over medium-high heat for 2 to 4 minutes or until beef is of desired doneness, turning once.
  • To serve, drizzle cooking liquid over cut surfaces of rolls. Layer lettuce, steak and onion in rolls.

4 hard rolls, split
½ cup mayonnaise
3 cloves garlic, minced
1 tablespoon Parmesan cheese
3 tablespoons olive oil
2 pounds round steak, thinly sliced
1 large onion, sliced and quartered
1 pinch coarse sea salt
½ teaspoon Worcestershire sauce
? teaspoon liquid smoke
8 (1 ounce) slices provolone cheese
½ teaspoon Italian seasoning

Steps:

  • Preheat an oven to 500 degrees F (260 degrees C). Split the rolls open and toast them on a baking sheet in the oven while it is preheating. Mix together the mayonnaise, garlic, and Parmesan cheese in a small bowl. Refrigerate until ready to use. Remove the rolls from the oven when toasted as desired.
  • Heat olive oil in a large skillet over medium-high heat. Carefully place the sliced steak and onions in the pan and season with sea salt, Worcestershire sauce, and liquid smoke. Cook and stir until the steak is browned and the onion is tender, about 10 minutes.
  • Generously spread the prepared garlic-Parmesan mayonnaise on both halves of the toasted rolls. Divide the steak and onion mixture evenly among the bottom halves of the rolls, piling them high. Top each with 2 slices provolone cheese and sprinkle with Italian seasoning. Place the tops on the sandwiches.
  • Bake the sandwiches on a baking sheet in the preheated oven until the cheese is melted, about 5 minutes.

  • "To prepare garlic oil: Mix together 1/4 cup of olive oil and the garlic and let rest for 30 minutes. Heat 1 tablespoon each of the olive oil and butter in a heavy 12- or 13-inch skillet over medium-low heat. Add sliced onions and saute, stirring frequently, until soft and light brown, about 7 to 10 minutes. Add garlic, and stir until fragrant, about 1 to 2 minutes more. Remove from skillet and set aside. While the onions are cooking, slice the cube steak against the grain, into 1/2-inch wide strips. Generously sprinkle meat with seasoned salt and pepper, to taste. Using the same skillet over high heat, add another 1 tablespoon each of the olive oil and butter, heat until butter begins to brown. Add meat to the skillet in a single layer, and saute, without stiring, for about 1 to 2 minutes, or long enough for first side to brown. Using a spatula, turn meat to the other side, and saute another 1 to 2 minutes, or until browned and no longer pink. Once the meat is browned, add Worcestershire sauce, consomme, and Sriracha, to taste (I use 4 to 5 good shakes). Stir to combine and bring to a boil. Lower heat to medium, and cook until sauce is reduced by about half. Stir in remaining 2 tablespoons of butter to slightly thicken and finish the sauce. Return onions to skillet, stirring to combine, and cook until heated through. Turn off heat, cover and let sit while you prepare rolls. Splt rolls in half, brush both sides of the split rolls with garlic oil, place on a baking sheet and broil for 1 to 2 minutes on each side, until lightly golden brown. To assemble, lay bottom of the roll face-up on a plate. Cover with a layer of meat and onions, followed by a spoonfull of juice from the pan. Top with other half of roll, cut sandwich in half, and enjoy!"

  • Heat a heavy griddle pan over medium high to high heat. Wipe griddle with a drizzle of oil using a paper towel. Sear and cook thin sliced steaks until brown but not crisp, about 2 minutes on each side. Cook steaks in single layers in 2 batches and tenderize by cutting into meat with the side of your spatula while they cook. When the steaks are browned, just before you remove them from heat, sprinkle them with garlic salt and pepper.
