I forgot how quick and easy and inexpensive this pie was! My sister made this a while back, and I'm so glad she did! This is such a great summer pie...light and fluffy and can be made with any flavor pudding to please everybody! I also use a little bit of Cool Whip on top to make extra yummy! This recipe is from the back of the Dream Whip box.

2 (1 1/3 ounce) envelopes dream whip brand whipped dessert topping mix
2 3/4 cups cold milk, divided
1 teaspoon vanilla
2 (3 1/2 ounce) packages jell-o brand instant pudding mix, any flavor
1 baked graham cracker pie crust

Steps:

  • Beat whipped topping mixes, 1 cup of the milk and vanilla in large bowl with electric mixer on high 6 minutes or until topping thickens and forms peaks.
  • Add remaining 1-3/4 cups milk and pudding mixes; beat on low speed until mixed.
  • Beat on high speed 2 minutes, scraping bowl occasionally.
  • Spoon into pie shell.
  • Refrigerate at least 4 hours.
  • Garnish as desired.
  • Store leftover pie in refrigerator.

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1/2 cup sugar
1/4 cup cornstarch
1/8 teaspoon salt
1 cup milk
1 cup semisweet chocolate chips
2 egg yolks, slightly beaten
1 package (3 oz) cream cheese, cubed, softened
1 1/2 cups whipping cream
1 teaspoon vanilla

Steps:

  • Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie pan. Bake 9 to 11 minutes or until light golden brown. Cool completely.
  • In 2-quart saucepan, mix sugar, cornstarch and salt. Gradually stir in milk until well blended. Add chocolate chips and egg yolks; cook over medium heat, stirring constantly, until mixture is thickened. Remove from heat. Beat in cream cheese with wire whisk until smooth. Cover surface with plastic wrap; refrigerate just until cool, about 1 hour.
  • In large bowl with electric mixer, beat whipping cream and vanilla on high speed until soft peaks form. Reserve 1 cup whipped cream for topping. Fold remaining whipped cream into cooled chocolate mixture. Spoon evenly into cooled baked shell. Refrigerate 6 to 8 hours or overnight. Spoon or pipe reserved whipped cream over filling. Store in refrigerator.

A classic French dessert and usually much more difficult to make - and the good news is, you don't have to wait for this to chill. I had some immediately after mixing and it was so good!
