This “lazy” lasagna requires very little prep, cooks on Low for a few hours and it’s ready to scoop and serve. It’s a creamy, cheesy, delicious new dinner we can’t stop thinking about.

8 oz uncooked lasagna noodles, broken into 2-inch pieces
2 cups shredded cooked chicken
1/2 cup chopped onion
2 teaspoons finely chopped garlic
1 jar (15 oz) Alfredo pasta sauce
1 1/2 cups Progresso™ chicken broth (from 32-oz carton)
1/2 teaspoon dried basil leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups shredded Italian cheese blend (6 oz)
1 package (5 oz) fresh baby spinach

Steps:

  • Spray 4-quart slow cooker with cooking spray. Add lasagna noodles, chicken, onion, garlic, Alfredo sauce, chicken broth, basil, salt and pepper to slow cooker. Stir gently; stir in 1 cup of the cheese.
  • Cover and cook on Low heat setting 1 1/2 hours; stir mixture thoroughly until pasta is covered in sauce. Cover; cook 1 1/2 hours longer or until pasta is tender.
  • Gradually add spinach, carefully stirring to wilt; sprinkle with remaining 1/2 cup cheese. Increase to High heat setting; cover and cook 5 to 10 minutes or until cheese is melted.

An easy and delicious Italian sausage lasagna made in your slow cooker. You may never bake a lasagna in the oven again!

Number Of Ingredients 13

1 lb ground Italian sausage
28 ounce can tomato puree
1 tsp dried basil
1 tsp garlic powder
1 TBSP dried oregano
1/2 tsp salt
1/2 tsp black pepper
9 uncooked lasagna noodles
1 lb mozzarella cheese, shredded
24 ounces cottage cheese
1/2 cup Parmesan cheese, freshly grated
1 tsp vegetable oil
1 cup water

Steps:

  • 1. Cook the sausage in a large pan over medium heat while breaking it up until well browned, about 6 minutes.
  • 2. Take the pan off the heat and transfer the sausage to a paper towel lined plate and discard any grease from the pan.
  • 3. Return the sausage to the pan along with the tomato puree, basil, garlic, oregano, salt, and pepper. Stir to combine.
  • 4. Lightly oil the inside of a 6-quart crock-pot. Spread a small amount of the sausage tomato sauce on the bottom of the crock-pot, just enough to lightly cover.
  • 5. Take 3 uncooked noodles and lay them in to cover the bottom of the crock pot (youll have to break them up to fit). Spread 1/3 of the sauce on top of the noodles then 1/3 of the mozzarella on top of the sauce. Spread on half the cottage cheese then repeat noodles then sauce then mozzarella. Spread on the remaining cottage cheese then the remaining noodles then the remaining sauce and then the remaining mozzarella. Sprinkle the Parmesan on top and pour the cup of water in the crock-pot along the sides.
  • 6. Cover the crock-pot and cook on low for 4 to 4 1/2 hours or until noodles are tender.

  • Fold two 18-in. square pieces of foil into thirds. Crisscross strips and place strips on bottom and up sides of a 6-qt. slow cooker. Coat strips with cooking spray. Combine artichoke hearts, 1/2 cup Parmesan cheese, basil and 2 garlic cloves., In a large skillet, crumble chicken over medium heat 6-8 minutes or until no longer pink; drain. Set chicken aside. Add oil and onion; cook and stir just until tender, 6-8 minutes. Add salt, pepper and remaining garlic; cook 1 minute longer. Stir in wine. Bring to a boil; cook until liquid is reduced by half, 4-5 minutes. Stir in cream, cream cheese and Monterey Jack cheese. Return chicken to pan. In a bowl, combine egg, cottage cheese and remaining 1/2 cup Parmesan., Spread 3/4 cup chicken mixture into slow cooker. Layer with 3 noodles (breaking noodles as necessary to fit), 3/4 cup chicken mixture, 1/2 cup cottage cheese mixture, 1 cup artichoke mixture and 1/2 cup mozzarella cheese. Repeat layers twice; top with remaining 1/2 cup mozzarella cheese. Cook, covered, on low until noodles are tender, 3-4 hours. Remove slow cooker insert and let stand 30 minutes. If desired, serve with pesto and sprinkle with additional basil.
