Yield Serves 4

Number Of Ingredients 6

1 Onion - Chopped
2 Cloves Garlic - Minced
Olive Oil
1 Can of Crushed Tomatoes
Fresh Basil Leaves
1 lb of Penne Pasta (Or any other kind pasta you like)

Steps:

  • 1) Bring a large pot of salted water to a boil. 2) Meanwhile, in a medium sauce pan, saut? the onions and garlic in the olive oil on medium heat for about 5 minutes or until the onions and garlic are soft and translucent. 3) Add the tomatoes and half of the basil. Season with salt and pepper to taste. Bring to a simmer and cook for about 20 minutes. 10 minutes with the lid on, and 10 minutes with the lid off. 4) When the sauce is 10 minutes away from completion, cook the pasta according to the packaging instructions. 5) Once the pasta is done, drain it and place it back into the same pot. Toss it with half of the sauce and the remaining fresh basil. Plate the pasta and serve it with more sauce, fresh basil and shavings of parmiggiano reggiano. (If you have grated parmiggiano reggiano use that instead of the fresh shaved.) This sauce can be prepared three days in advance, and will keep in the freezer for 3 weeks! Enjoy!

Number Of Ingredients 6

1/2lb of Spaghetti
1lb of Cherry Tomatoes, halved
3 Cloves of Garlic, smashed and peeled
1/4 cup of Olive Oil
Fresh Basil
Salt and Pepper to taste

Steps:

  • 1) Fill a pot with water, add a generous pinch of salt and bring to a boil. 2) In a large skillet (big enough to hold the sauce and pasta) add the oil and garlic, once it starts to sizzle and lightly brown, add the cherry tomatoes along with some basil and a pinch of salt, and cook for about 15 minutes or until a sauce forms. 3) Half way through the sauce cooking, add the pasta to the boiling water, cook until al dente, drain and add to the sauce along with some more basil, cook all together for a minute then serve with an extra drizzle of olive oil and black pepper.

Preheat your oven to 350 degrees, lightly grease a 9x13 baking pan and set it aside. 2) In a large skillet with high sides, add the oil, preheat over medium-high heat, add the ground beef, break it up as much as you can, season with a pinch of salt and cook until mostly cooked through. 3) If your ground beef released a lot of fat, discard it, then add the garlic, cook for a minute, add the marinara sauce along with the basil, partially cover the pan, lower the heat to medium and simmer for about 8 minutes. This is the time to add the spaghetti to the boiling salted water and cook for about 8 minutes. Make sure you reserve some of the cooking water before draining the pasta and putting back in the hot pot. 4) To the hot pasta, add the cream cheese, sour cream, parm, black pepper and a splash of the cooking water, mix together well for a few minutes or until the cream cheese is fully melted and well incorporated, set aside. 5) Add a thin layer of sauce in the bottom of your dish, then add the creamy spaghetti mixture, cover the top with more sauce, followed by the mozzarella and some parm and pop the whole thing in the oven for about 40 minutes or until the top is golden brown and bubbly. Allow to cool about 20 minutes before cutting and serving.
