Number Of Ingredients 15

2 cup grits
2 cup fish or chicken stock
3 cup water
salt
4 tbsp butter
¼ cup cream
¼ cup shredded cheese
1½ pound or similar fish tripletail fillets
¼ pound bacon
1 pound chopped fresh mushrooms
6 diced plum tomatoes
4 chopped green onions
2 zested and juiced lemons
to taste worcestershire sauce
to taste black pepper

Steps:

  • Boil the water and stock and add salt to taste. Start stirring it and pour the grits in slowly; this prevents lumps. Drop the heat to a simmer and cook, stirring frequently, for about 20 to 30 minutes.
  • Meanwhile, salt the fish fillets and set aside on the counter. Fry the bacon in a large pan to render the fat. Remove the bacon, chop and set aside.
  • Pat the fish dry with paper towels and place in the hot bacon fat, the flattest side down. Keep the heat at medium-high. Use a spoon to ladle bacon fat over the top of the fillets until they turn opaque.
  • Keep doing this for about 1 minute. Do not flip the fish unless the pieces are more than 1 inch thick. When there is a nice sear, remove the fish from the pan and set, seared side up, on a cutting board.
  • If there is less than about 2 tablespoons of bacon fat in the pan, add some more. Add the mushrooms and sear them well. They'll sear, then give up their water. Let this happen without moving the mushrooms. This should all take about 3 minutes or so.
  • Right before serving, stir the butter, cream and cheese into the grits until the butter and cheese melts in.
  • When the mushroom water subsides, add the remaining ingredients and stir-fry them about 90 seconds. To serve, give everyone some grits, then some fish, then pour the mushroom-tomato mixture over.

1 teaspoon butter, or as needed
2 pounds cod fillets
¾ cup freshly grated Parmesan cheese
? cup butter, softened
¼ cup mayonnaise
¼ cup chopped green onion
3 tablespoons lemon juice
2 teaspoons dried dill weed
¼ teaspoon salt
¼ teaspoon ground black pepper
2 dashes hot pepper sauce (such as Tabasco®)

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; lightly coat with about 1 teaspoon butter.
  • Lay fish in a single layer on the prepared baking sheet.
  • Mix Parmesan cheese, 1/3 cup butter, mayonnaise, green onion, lemon juice, dill, salt, black pepper, and hot sauce together in a bowl.
  • Broil fish in the preheated oven until it flakes easily with a fork, 7 to 8 minutes. Gently spread Parmesan cheese mixture over fish; return to oven and broil until topping is bubbling and lightly browned, about 2 more minutes.

  • "GRITS: combine the milk, butter, 1/2 tsp salt, 1/2 tsp white pepper (this is to not have black specks in the grits more than anything) in a saucepan over medium heat. Once simmering, gradually add grits, whisking in and stirring contantly. Reduce heat to medium and cook 4-5 minutes until thick, stirring occasionally. This should make a full 2 qt saucepan of thick creamy grits. Remove from heat, add 1/2 parmesan cheese and stir in mixing well. Set aside. (you can adjust a little butter, salt and pepper to taste if you like). NEXT: Cook bacon until crisp, remove but keep the bacon grease in the skillet. Cast iron is best. Crumble the bacon and set aside. Saute the onion, garlic and peppers until onions are translucent. Stir in the chipotle chile and adobo sauce and parsley. Add the shrimp and cook until pink. At this point you can also do some adjusting to taste if you like. Spoon this shrimp and vegetable mixture into a bowl and set aside. NEXT: To deglaze the skillet and make the cream sauce: Pour 1/2 white wine into skillet and stir to loosen browned bits of goodies from the pan (on low heat). Slowly add 1 cup of heavy cream and whisk together. Reduce a bit until it thickens up. Add a little salt and white pepper to taste. Add the bowl of sauteed shrimp and veggie mixture to the cream sauce and mix well over low heat. At this point you can also adjust to taste. I believe I may have added just a bit more adobo sauce for some spice (but that's just how we like it). When you have stirred and cooked this over low heat for about 5-10 minutes you can remove it from heat. TO SERVE: Spoon grits into bowls, make a depression in the middle, and spoon the shrimp mixture on top. Garnish by sprinkling some chopped green onions on top. FOR FANCY GATHERINGS it has been suggested by Paula Deen to use martini glasses for serving. Put grits in the bottom, shrimp mixture on top. This is so delicious, you will never go to an expensive restaurant for shrimp and grits again!!!! "
