YOTAM OTTOLENGHI’S JERUSALEM LAMB SHAWARMA - NYT COOKING
The British-by-way-of-Jerusalem chef Yotam Ottolenghi cooked this recipe as part of what he called “a Middle Eastern take on a proper English garden party.” He raises high the street-meat ideal of shawarma, resulting in a deeply flavored cut of lamb. The lamb would ideally meet the spice mix the day before it is cooked, so it takes some time, but not much work. The first 11 ingredients, known as Lebanese spice mix, make a versatile mixture that can be used to marinate fish, meat or vegetables.

- Put the peppercorns, cloves, cardamom, fenugreek, fennel, cumin, star anise and cinnamon in a cast-iron pan set over medium-high heat and dry-roast them for a minute or two, until the spices begin to pop and release their aromas. Take care not to burn them. Add the nutmeg, ground ginger and paprika, and toss for a few more seconds, just to heat them, then transfer to a spice grinder. Process the spices into powder. Transfer to a medium bowl, and stir in the sumac, salt, fresh ginger, garlic, cilantro, lemon juice and oil, and stir to combine.
- Use a small sharp knife to score the leg of lamb in a few places, making half-inch-deep slits through the fat and meat. Put the lamb in a large roasting pan and rub the marinade all over it, using your hands to massage the meat. Turn the lamb fat-side up, cover the pan with aluminum foil and place it aside on a countertop for at least a couple of hours, or preferably, rest it overnight in the refrigerator.
- Heat oven to 350. Remove the aluminum foil, and place the lamb in the oven. Roast for approximately 4 1/2 hours, or until the meat is completely tender. After 30 minutes of roasting, add about a cup of boiling water to the pan, and use this liquid to baste the meat every hour or so. (Add more water, as needed, making sure there is always a little in the bottom of the pan.) After 90 minutes or so, cover the lamb with aluminum foil to prevent the spices from burning. Once the lamb is done, remove it from the oven, and leave to rest for 10 to 15 minutes before carving and serving.

CHICKEN TAGINE WITH OLIVES AND PRESERVED LEMONS - NYT COOKI…
This rich and fragrant chicken stew is laden with complex flavors and spices reminiscent of the sort you might encounter in a mountainside cafe in Morocco. Save yourself the cost of a plane ticket, however, and make this at home. First, rub the chicken with a redolent combination of garlic, saffron, ground ginger, paprika, cumin, turmeric and black pepper, then pop it into the refrigerator for 3 to 4 hours to marinate. Once that's done, brown the chicken parts, and remove from the pan, making room for a pile of sliced onions that you'll sauté until golden brown. Nestle a cinnamon stick into the tangle of onions, pile the chicken parts on top and scatter with slices of preserved lemons and olives, a combination of green and kalamata. Add a bit of chicken stock and lemon juice, then cook over low heat until the chicken is cooked through, and your house smells amazing.

- Mix garlic, saffron, ginger, paprika, cumin and turmeric together. If not using kosher chicken, add 1/2 teaspoon salt. Add pepper to taste. Rub chicken with mixture, cover, refrigerate and marinate 3 to 4 hours.
- Heat oil in heavy skillet. Add chicken, and brown on all sides. Remove to platter. Add onions to skillet, and cook over medium-low heat about 15 minutes, until lightly browned. Transfer to tagine, if you are using one, or leave in skillet. Add cinnamon stick.
- Put chicken on onions. Scatter with olives. Quarter the lemons, remove pulp and cut skin in strips. Scatter over chicken. Mix stock and lemon juice. Pour over chicken.
- Cover tagine or skillet. Place over low heat, and cook about 30 minutes, until chicken is done. Scatter parsley on top, and serve.

OTTOLENGHI'S ORZO WITH PRAWNS, TOMATO AND FETA

1. In a medium bowl, mix the feta with ¼ teaspoon of the chilli flakes, 2 teaspoons of the fennel seeds and 1 tablespoon of the oil. Set aside while you cook the orzo.
2. Place a large sauté pan, for which you have a lid, on a medium high heat. Add 2 tablespoons of oil, orzo, ⅛ teaspoon of salt and a good grind of pepper. Fry for 3–4 minutes, stirring frequently, until golden-brown, then remove from the pan and set aside.
3. Return the pan to the same heat and add the remaining 2 tablespoons of oil, ¼ teaspoon of chilli flakes and 2 teaspoons of fennel seeds, the garlic and the orange skin. Fry for 1 minute, until the garlic starts to lightly brown, then add the tomatoes, stock, 200ml of water, ¾ teaspoon of salt and plenty of pepper. Cook for 2–3 minutes, or until boiling, then stir in the fried orzo. Cover, then lower the heat to medium low and leave to simmer for 15 minutes, stirring once or twice throughout so the orzo is cooked. Remove the lid and cook for a further 1–2 minutes, until the consistency is like a risotto. Stir in the prawns for 2–3 minutes until they are pink and cooked. Stir in the basil and serve at once, with the marinated feta sprinkled on top.

Heat the oil in a large flameproof casserole dish. Add the ribs and brown them all over, then set them aside. Add the onion, carrots, celery and garlic and cook over a low-medium heat until softened. Put the ribs back in the casserole dish and add the red wine, tomatoes, orange peel, herbs and beef stock. Season with the salt, sugar and peppermix. Bring to a simmer, cover with a well-fitting lid and cook for 2–2½ hours or until the beef is tender and comes away easily from the bone.
Transfer the ribs to a plate and cover them with foil while you finish the sauce. Strain the liquid through a sieve into a bowl, pushing the vegetables down with the back of a ladle to extract as much flavour as possible. Discard the vegetables and herbs. Pour the liquid back into the casserole dish and boil hard until reduced by two-thirds to make a thickened and well-flavoured sauce.
For the vegetable and pancetta garnish, put the baby carrots and shallots in a shallow pan. Add 300ml of water and a tablespoon of butter, then season with the sugar and salt. Cover with a lid and bring to the boil, then simmer until the carrots and shallots are tender. Remove the lid and reduce the liquid to a sticky glaze.
In a separate small pan, fry the mushrooms and the pancetta together in a little butter for a couple of minutes. Add them to the carrots and shallots.
Put the ribs back in the sauce and warm them through for a minute or so, then add the carrots, shallots, mushrooms and pancetta. Serve topped with some chopped parsley.
Dauphinoise potatoes or aligot both make good accompaniments.
To make Rick’s Peppermix, blitz 1 chipotle chilli (seeds removed), 1 pasilla chilli (seeds removed), 2 tbsp black peppercorns, 2 tbsp white peppercorns, 2 tsp Sichuan peppercorns and 1 tbsp salt in a spice grinder and store in a jam jar until required. You only need 1 tsp of peppermix for this recipe.
Tip: It may not look enough but one short rib per person is perfect.
