PINTO BEANS AND RICE RECIPE: HOW TO MAKE IT

Pinto Beans and Rice Recipe: How to Make It image

I love to try different foods, and I especially like to see the reaction of my family when I put new dishes on the dinner table. This was a success. I've since served it at many potlucks and have been asked for the recipe every time.—Linda Romano, Mt. Airy, North Carolina

Provided by Kelly Lowe

Total Time 30 minutes

Prep Time 5 minutes

Cook Time 25 minutes

Yield 6

Number Of Ingredients 18

For the rice:
1 cup long grain white rice
1 tbsp olive oil
8 oz (1 can) tomato sauce
1 cored, seeded and quartered red bell pepper
1½ cups chicken stock or vegetable broth
¾ tsp kosher salt
1 tsp garlic powder
¼ tsp chili powder
¼ tsp cumin
½ cup diced and 2 tbsp chopped cilantro for garnish, optional tomatoes
For the beans:
15 oz (1 can) drained and rinsed pinto beans
½ cup chicken stock or vegetable broth
1 tbsp tomato paste
¾ tsp salt
¾ tsp chili powder
½ cup for garnish, optional pico de gallo

Steps:

  • Rice:
  • Heat the olive oil in a 2-quart pot over medium heat. Add the rice and stir until the rice is coated in the oil. Cook for about 5 minutes or until the rice is toasted and lightly browned.
  • Add all of the remaining ingredients. Do this off the heat to avoid splattering.
  • Return the pot to the burner, bring the contents to a boil.
  • Cover the pot and turn the heat to low; cook for 17 minutes.
  • Take the pot off the heat and let it stand, covered for 5 minutes. Remove and discard bell peppers. Stir well. Garnish with tomatoes and green onions if desired.
  • Beans:
  • Put all of the ingredients in a pan over medium-high heat, bring to a simmer. Cook for 7 to 10 minutes until the sauce has thickened.
  • Taste and add more salt or chili powder if needed. Add a bit more chicken stock if the sauce gets too thick for liking. Garnish with pico de gallo if desired.
