Steps:
- Boil the eggs for approximately 5 minutes
- Remove the eggs from the boiling water and promptly put them in a bowl of ice water
- After about 5 mins, peel the eggs and set them aside
- Next mix the ground sausage with all the seasonings and set aside. (You could use breakfast sausages if you prefer)
- Whisk the last egg in a bowl and set aside
- Set up your workstation as follows: Boiled Eggs -> Ground Sausage -> Flour -> Egg wash -> Bread crumbs -> Empty Plate
- Next flatten 1/4 of the sausage in the palm of your hands
- Place a boiled egg in the center of the flattened sausage
- Wrap the ground sausage around the egg completely
- Next, roll the sausage-wrapped egg in some flour
- Next, roll the sausage-wrapped egg in the eggwash
- Last step, roll the sausage wrapped egg in the bread crumbs until it is completely covered. Set aside and repeat the same step for all the other boiled eggs

Steps:
- Place your small eggs into your air fryer baking pan inside of your air fryer basket. Cook for 19 minutes at 120c/250f. Peel your eggs once they are cool enough to handle.
- Place your medium bread roll once broken up into chunks into your blender and make into breadcrumbs. Aim for quick coarse breadcrumbs as it will add to the texture of your scotch eggs.
- Season the breadcrumbs with ¼ of your sage and some salt and pepper.
- Place into a bowl everything else as well as the last of the sage and some extra salt and pepper. Mix well.
- Season your hands with oat flour and using your hands roll out the sausage meat.
- Place the eggs one at a time onto the rolled-out sausage meat and seal each egg in the sausage meat.
- Coat in breadcrumbs and place in the air fryer basket.
- Cook for 10 minutes at 180c/360f.
- Serve.

- Pour water into the inner steel pot of pressure cooker. Set trivet over the water. Arrange eggs on the trivet. Lock pressure cooker lid in place. Set steam vent to Sealing. Select Eggs and cook for 3 minutes on Low pressure. Once the cooking cycle has completed, set steam vent to Venting to quick-release pressure. Plunge eggs immediately into an ice bath to cool completely, about 1 minute. Peel eggs and set aside. Preheat air fryer to 390°F (200°C). Add crushed pork rinds to a small bowl. Beat egg in a separate bowl. Divide sausage into 6 portions. Take each portion of sausage, pat down to a patty and place 1 egg in the middle, gently wrapping sausage around the egg until egg is completely covered. Repeat with remaining eggs and sausage. Dip 1 sausage-wrapped egg into beaten egg and then into pork rinds, gently rolling around to coat Scotch eggs on all sides. Repeat with remaining sausage-wrapped eggs.
