A simple and yet delicious low calorie dish. I have used tilapia with this dish and it has turned out fine.

Number Of Ingredients 7

4 flounder fillets
1/2 lemon
3 scallions, sliced thinly
1 medium tomatoes, chopped
1/8 teaspoon basil
1/4 teaspoon garlic powder
1 1/2 tablespoons butter

Steps:

  • Preheat oven to 375°F.
  • Arrange fish fillets in an ovenproof casserole in a single layer.
  • Zest the lemon and then squeeze the juice and sprinkle the zest over the fish. Top with scallions and tomato.
  • Season with the basil and garlic powder. Sprinkle with salt and pepper to your personal taste.
  • Dot with butter. Bake for 10 minutes or until flakey.

This is just salty and umami ingredients mixed together and you get to take all the credit. The toasted sesame seeds are a buttery underdog here and add great texture. Serve this with crackers or a giant loaf of bread to tear and dunk. Try to buy good-quality soft feta, and you'll get best results if the cheeses are at room temperature when you combine them. I love old-school things like Melba toast on the side here. Get creative!

8 ounces creamy French feta cheese
1/2 cup mayonnaise 
4 ounces cream cheese, softened 
2 tablespoons toasted sesame seeds 
2 teaspoons chopped fresh oregano 
1/4 teaspoon red pepper flakes 
1 large clove garlic, grated 
1/2 cup finely grated Parmesan 
1 tablespoon red wine vinegar 
8 scallions, green and white parts both, minced, plus additional for garnish 
Kosher salt, if needed 
Seedy crackers, for serving
Sliced carrots and cucumbers, for serving

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment, gently whip the feta, mayonnaise and cream cheese at medium speed until smooth and combined, 2 to 3 minutes. Beat in the sesame seeds, oregano, red pepper flakes and garlic. Remove the bowl from the mixer and stir in the Parmesan, vinegar and scallions. Taste for seasoning. Add salt, if desired.
  • Spoon the dip into a bowl and garnish with scallions. Serve with seedy crackers and sliced carrots and cucumbers.
