1 broiler/fryer chicken (about 3 pounds), cut up
1 pound red potatoes, cut into chunks
1/2 to 3/4 cup Italian salad dressing
1 tablespoon Italian seasoning
1/2 to 3/4 cup grated Parmesan cheese

Steps:

  • Place chicken in a greased 13-in. x 9-in. baking dish. Arrange potatoes around chicken. Drizzle with dressing; sprinkle with Italian seasoning and Parmesan cheese. , Cover and bake at 400° for 20 minutes. Uncover; bake 20-30 minutes longer or until potatoes are tender and chicken juices run clear.

1 1/4 lb. chicken cutlets
1/4 tsp. salt
tsp. pepper
10 oz. sliced mushrooms
1 shallot
1/2 c. chicken broth
1/2 c. white wine
2 tbsp. butter
Chopped parsley
Soft polenta
Sautéed broccoli rabe

Steps:

  • In 12-inch skillet, heat olive oil on medium-high. Sprinkle chicken cutlets with salt and pepper. Cook 6 minutes or until cooked through, turning once; transfer to plate and cover. Add mushrooms and minced shallot to skillet. Cook 3 minutes. Add white wine; cook 2 minutes. Stir in chicken broth and juices on plate; cook to reduce by half. Off heat, stir in butter, then chopped parsley. Serve on soft polenta with sautéed broccoli rabe, if desired.
