FOR THE BURGERS:
1.5 pounds lean ground beef
2 Tablespoons Thousand Island Dressing
2 Tablespoons chopped dried onion
1/2 teaspoon salt
1/4 teaspoon pepper
TOPPING:
1 1/2 cups Frank's Sauerkraut
1 1/2 cups chopped Corned beef
FOR SERVING:
6 Rye buns
6 slices Swiss cheese
Thousand Island Dressing

Steps:

  • Combine burger ingredients together, form into 6 patties. Grill or pan fry until done. Top with Swiss cheese and melt. In a small saucepan, warm corned beef and kraut while burgers are grilling. Butter insides of rye rolls and toast in a skillet or on the grill. Build the burger: Place burger with melted cheese on bottom bun. Top with a heap of kraut/corned beef mixture. Drizzle with Thousand Island dressing. Add top bun and serve.

1 lb lean (at least 80%) ground beef
1/4 cup chopped onion (1/2 medium)
2 cloves garlic, minced
1 cup undrained sauerkraut (from 14-oz can)
6 slices dark rye bread, toasted
1/2 cup Thousand Island dressing
6 thin slices (1/2 oz each) Swiss cheese

Steps:

  • In 8-inch skillet, cook ground beef, onion and garlic over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked and onion is tender; drain.
  • Meanwhile, set oven control to broil. In 1-quart saucepan, heat sauerkraut; drain. Arrange toasted slices of bread on broiler pan.
  • Stir salad dressing into beef mixture. Spoon beef mixture evenly onto bread slices. Top each with sauerkraut and Swiss cheese.
  • Broil sandwiches 4 to 6 inches from heat 3 to 4 minutes or until cheese is melted and bubbly.

  • Spread some butter on 1 side of each slice of bread. Place 4 pieces, buttered side down, on a foil-lined baking sheet. Spread some of the Russian dressing on the sides facing up. Evenly lay the pickles, tempeh if using, sauerkraut, and then cheese on top. Place the open faced sandwiched under the broiler and cook until the cheese melts, about 2 minutes. Remove the baking sheet from the broiler. Spread the rest of the dressing on the uncovered side of the 4 remaining bread slices, place on top melted cheese, buttered side up to finish the sandwiches. Return to the broiler and toast sandwich, turning once so both sides get nice and golden brown, about 2 minutes total, serve hot.
