SWEET TAP DANCING MOSES WHY IS IT SO HOT IN MAY? EARTH, YOU OKAY BUDDY? Keep your core temp down this unusually warm-as-balls spring with a bowl of our cold sesame noodles. Unless you’re a climate change denier then you can go eat a big bowl of dicks.

Number Of Ingredients 16

Sesame dressing:
1 small minced shallot, about ¼ cup
1 tablespoon minced fresh ginger
1 tablespoon soy sauce or tamari
? cup rice vinegar
1 tablespoon mirin, apple juice, or your favorite liquid sweetener
2 tablespoons toasted sesame oil
1 tablespoon grape seed or other mild tasting oil
½ cup toasted sesame seeds, black or white if that’s all you can find
8 ounce ramen, soba, or udon noodles
1 pound asparagus, cut into ½ pieces
? cup minced fresh basil
? cup minced fresh mint
½ a cucumber, cut into matchsticks
1 carrot, cut into matchsticks
1 avocado, cut into slices

Steps:

  • First make the dressing by adding all the ingredients, except the sesame seeds, into a blender or food processor. Run till everything is mixed and the shallot and ginger are basically destroyed. Add the sesame seeds and let that shit run until it looks kinda sandy. You do NOT want this smooth; it’s got texture that takes it to another level of dope. Set this aside.  When you’re ready to eat, start cooking the noodles according to the package directs. About a minute before they’re done, throw in the asparagus so it can have a chance to soften up. This is legit the laziest way to blanche veggies. Drain that and then run the noodles and asparagus under some cold water to cool ‘em off. Throw the cooled noodles and veggies it in a large bowl with about ¾ of the dressing, mint, and basil. Mix all that together until everything is coated in dressing and the herbs are evenly distributed. You can either serve this right away the cucumber, carrots, and avocado piled alongside the noodles in a bowl or you can let them cool for a couple hours more, even overnight. When you assemble the bowls, pour the remaining dressing over the added veggies and enjoy yourself a refreshing lunch.

Japanese vegetarian soba noodle bowl with shredded hard-boiled egg, avocado, and shallots

Number Of Ingredients 15

1/4 cup black sesame seeds
2 tablespoons neutral-tasting oil
5 teaspoons soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1/2 teaspoon wasabi powder
1/4 teaspoon fine sea salt
3 bundles (about 11.5 ounces) dried soba, udon, or somen noodles
2 medium shallots, minced
1 avocado
2 large 12-minute eggs
8 small-to-medium radishes
4 cups tender greens, such as watercress, upland cress, baby arugula, or tatsoi
2 scallions, white and green parts, thinly sliced
Kecap manis (Indonesian soy sauce), for drizzling

Steps:

  • Place the sesame seeds in a dry skillet and set over medium-low heat. Toast, swirling the pan frequently, until fragrant—90 seconds to 2 minutes. Watch and smell carefully so that they don’t burn. Transfer to a mortar and coarsely grind, then transfer to a mixing bowl. Add the oil, soy sauce, vinegar, brown sugar, wasabi, and salt, and whisk until thoroughly combined.
  • Bring a saucepan of salted water to a gentle boil. Add the noodles and cook until tender, usually 4 to 7 minutes or according to the package instructions. Drain, rinse thoroughly under cold running water, then drain again thoroughly.
  • Add the noodles and shallots to the bowl with the sauce and toss well, until the noodles are thoroughly coated. At this stage, the noodles can be transferred to an airtight container and kept in the fridge for up to 2 days. Bring to room temperature before serving.
  • Quarter the avocado around the pit. Remove and peel the segments, then slice into thin strips. Peel the eggs and grate them using the large holes of a box grater. Slice the radishes into thin rounds. Stack the rounds on top of each other and slice into thin matchsticks.
  • Divide the greens among four bowls, then top with the dressed noodles. Fan the avocado over the noodles in each bowl, then add a pile of the shredded egg, radishes, and scallions to each serving. Drizzle a bit of kecap manis over the avocado and serve.

This is one of the most popular recipes I've ever made! From kid's to old folks everyone loves these noodles. Add some spicy "Rooster sauce" and more ginger to give it even more flavor. I have now adjusted my original recipe post (9/07). Apparently an employee had written the recipe down incorrectly cause I never measured. It's a really easy dish to make for pot luck's etc. Toast your sesame seeds if they haven't already been toasted for better flavor. Almost all of the ingredients are available at any Oriental Market and most regular grocery stores. You can add other ingredients to make it a whole meal. --Please note-- the soy sauce amount was incorrect in this recipe! I have now changed it! Add more if you like.
