Almond Snack Mix Recipe: How to Make It - Taste of Home image

Number Of Ingredients 6

1 package (17.6 ounces) Rice Chex
2-3/4 cups sliced almonds
1 cup sugar
1 cup light corn syrup
3/4 cup butter, cubed
1 teaspoon almond extract

Steps:

  • Place cereal and almonds in a large bowl; set aside. In a heavy saucepan, combine the sugar, corn syrup and butter. Bring to a boil over medium heat, stirring occasionally, until a candy thermometer reads 250° to 266° (hard-ball stage)., Remove from the heat; stir in extract. Pour over cereal mixture; mix well. Spread onto waxed paper-lined baking sheets; cool. Toss to break apart. Store in an airtight container.

2?½ tablespoons butter
3 cups miniature marshmallows
½ cup chunky peanut butter
2?¼ cups chocolate toasted oat cereal (such as Cheerios)
1?¼ cups old-fashioned rolled oats
1 cup crushed hard pretzel twists
? cup roasted, salted almonds
¼ teaspoon kosher salt
Cooking spray

Steps:

  • Melt butter in a large saucepan over medium heat. Add marshmallows and peanut butter; cook 3 minutes or until smooth, stirring constantly. Remove mixture from heat; stir in cereal and next 4 ingredients (through salt).
  • Working quickly, spread mixture in an 8-inch square metal baking pan coated with cooking spray. Using a wet spoon, spread mixture into an even 1-inch layer; let stand 1 hour or until set. Cut into 16 squares.
