Berry Cobbler is such a warm and melty treat packed with fruity flavors. An easy summer dessert that’s perfect with a scoop of ice cream.

Number Of Ingredients 11

3 cup Blueberries
2 cup Raspberries
2 cup Blackberries
1 1/4 cup Sugar (divided)
2 tbsp Cornstarch
1 tsp Lemon Juice
1/3 tsp Vanilla
1 1/2 cup Flour
2 1/4 tsp Baking Powder
3/4 tsp Salt
1 1/2 cup Milk

Steps:

  • Preheat oven to 350.
  • Grease a 9x13" Baking dish and set aside.
  • Place all of the berries in a large bowl.
  • Add 1/4 cup sugar, the cornstarch, lemon juice and vanilla. Toss to coat.
  • Transfer mixture to prepared baking dish.
  • In another bowl, whisk together remaining sugar, flour, baking powder and salt.
  • Add in milk slowly while whisking.
  • Pour batter evenly over berries in baking dish.
  • Bake for 55-60 minutes until top is golden brown.

This dessert had a great taste. However, I would not call the consistency "cobbler". It had a much more cake-like texture than my usual cobbler recipe. I followed the recipe exactly, and my family did enjoy the dessert, but because I enjoy a more dense cobbler, I will stick to my old recipe.
