ASPARAGUS, POTATO, AND ONION FRITTATA RECIPE | ALLRECIPES
I had some asparagus and ham to use so I came up with this combination for lunch today!

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Heat the olive oil in a large skillet over medium heat; cook and stir the shredded potato and onion in the hot oil until the potatoes begin to brown, about 5 minutes.. Season with salt and pepper. Add the asparagus and ham and continue cooking until the asparagus is tender, another 5 to 7 minutes; transfer to the prepared baking dish. Whisk the eggs and milk together in a small bowl; pour evenly over the dish. Scatter the mozzarella and white Cheddar cheeses over the top of the potato mixture.
- Bake in the preheated oven until set in the middle, 20 to 25 minutes. Garnish with the basil to serve.

This frittata calls for cooked asparagus and a few small potatoes, but in a pinch you can use just about any vegetables you have on hand. A perfect lunch or light supper served with a salad of spring greens and some good crusty bread.

- Preheat the broiler. Heat 2 teaspoons oil in a large, ovenproof, nonstick skillet over medium heat. Add onion, garlic, rosemary and half of the tomato; cook, stirring, until the onion is tender, about 8 minutes.
- Add potatoes and cook, stirring, until they start to brown, about 4 minutes. Add asparagus and cook until heated through. Remove the vegetables from the pan; season with salt and pepper.
- Wipe out the pan, brush with the remaining 1 teaspoon oil, and return it to low heat.
- Lightly whisk whole eggs, egg whites and cheese in a medium bowl. Add the vegetables to the egg mixture and pour into the pan, gently stirring to distribute the vegetables. Cook over low heat until the underside is light golden, 5 to 8 minutes.
- Place the pan under the broiler and broil until the top of the frittata is puffed and golden brown, 1 to 2 minutes. Loosen the frittata and slide it onto a platter. Garnish with chives (or scallions) and the remaining chopped tomato.

- Adjust an oven rack to center position, and preheat to 425°. In a medium pot, add 2 pinches salt, potatoes, and water to cover the potatoes by about 1/2". Bring to a boil, and cook until cooked but not mushy, about 5 minutes. Set aside. In a large cast-iron skillet, cook the bacon over medium-low heat until crispy. Transfer bacon to a paper-towel lined plate. Drain fat, but leave about 1 teaspoon in the skillet. Add the asparagus to the skillet, and cook on medium heat until it begins to soften, about 2 minutes. Turn off heat and leave asparagus in skillet. In a large bowl, whisk the eggs. Add the cream, onion and garlic powders, black pepper, cayenne, and 1 teaspoon salt. Whisk to combine. Then stir in about half the cheese. Return bacon to the skillet with the asparagus. Turn the heat to low, then add the egg mixture. Stir in the potatoes, and top with the remaining cheese. Bake for about 15 minutes. Let cool for about 10 minutes before serving.
