Caramelized White Chocolate Spread Recipe - Justin Chapple ... image

Slow-roasting white chocolate makes the cocoa butter in it silky, rich and caramel-like, a technique championed by pastry chef Belinda Leong. Valrhona’s Ivoire white baking chocolate has just the right amount of cocoa butter for this spread from F&W’s Justin Chapple. Slideshow:  Chocolate Desserts

Yield Makes 1 1/4 cups

Number Of Ingredients 3

1/2 pound Valrhona Ivoire white baking chocolate, chopped (see Note)
1/2 cup heavy cream, warmed
Sea salt

Steps:

  • Preheat the oven to 225°. In a medium stainless steel bowl, bake the chocolate for 3 hours, stirring every 15 minutes, until golden. Gradually whisk in the warm cream and a generous pinch of salt. Let cool completely, then refrigerate until just spreadable, about 10 minutes.

This vegan white chocolate spread is a delicious alternative to a regular chocolate spread. It's made with only a few ingredients and comes together in no time. This spread is best kept at room temperature. If youn want to store it in the fridge, make sure to let it sit at room temperature for about 1 hour before serving.

Number Of Ingredients 5

180 g 1 3/4 cup slivered almonds
2 tablespoons vegetable oil
seeds from 1/2 vanilla bean or 2 teaspoons vanilla extract
150 g 5.3 oz white chocolate, melted
1/8 teaspoon salt

Steps:

  • Place the almonds in a small pan and toast them until golden brown. Let cool to room temperature.
  • Add almonds and oil to a food processor and grind until the nuts start to release their oils and the crumbs turn into nut butter. Depending on your food processor, this may take a while. Scrape down the sides from time to time and make sure not to overheat your processor.
  • As soon as your almond butter is ready, add vanilla. Blend again.
  • Pour in chocolate, add salt, and process until smooth.
  • Transfer to a glass jar.
