Steps:
- Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
- Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Steps:
- Preheat oven to 375 degrees
- Cream butter and sugar, then add eggs and sour cream. Stir in vanilla, salt, baking powder and baking soda. Gradually add the flour and mix until combined. On a floured surface roll out to 1/2 inch thick and cut cookies out with a 2 inch round cookie cutter. Bake 7-9 minutes (DO NOT overbake these cookies, what makes them soft and good is that they are slightly underbaked). Remove to a cooling rack and cool completely.
- Beat butter and powdered sugar until fluffy. Add vanilla, coconut extract, lime zest, salt and then add heavy cream until frosting is spreadable. Generously spread frosting over cookies.
- After the cookies are frosted, add one small wedge of lime to be squeezed over the top of the cookie right before eating!
