340 g of Canned Chickpeas
130 mL of Water
1 tbsp of Extra Virgin Olive Oil
50 g of Oat Flour (or whole wheat flour)
0.5 tsp of Garlic Powder
0.5 tsp of Onion Powder
0.5 tsp of Dried Sage
0.5 tsp of Dried Thyme
2 tbsp of Ground Flaxseeds
1 tbsp of Starch (potato, corn, or arrowroot)
40 g of Breadcrumbs (regular or gluten-free)
160 g of Tomato Sauce
2 tbsp of Fresh Basil
2 tbsp of Nutritional Yeast (or vegan parmesan)
60 g of Vegan Mozzarella

Steps:

  • Blitz the chickpeas with 30ml (1 fl oz) water and oil. Then, mix them with oat flour, garlic, onion, sage, thyme, and salt in a bowl.
  • Divide the dough into four pieces and shape them into oval patties, about 1 cm (1/2 inch) thick.
  • Combine flaxseeds with the remaining water in a bowl. Then, coat each patty first with starch and then with the flax mix. Finally, press it over the breadcrumbs until completely coated.
  • Bake the "chicken" for 15 minutes at 220°C (430°F) until crispy.
  • Meanwhile, mix the tomato sauce with chopped basil and a pinch of salt in a bowl.
  • Now, top the patties with tomato sauce, nutritional yeast, and vegan mozzarella slices.
  • Finally, bake them for 10 more minutes until the cheese has melted. Serve them warm with spaghetti or a side salad.
