James Martin's easy cottage pie recipe is a family favourite. He goes back to basics to show you how to make a classic version, but easier. Each serving provides 722 kcal, 28g protein, 37g carbohydrate (of which 6g sugars), 48g fat (of which 23g saturates), 5g fibre and 1.3g salt.

50ml/2fl oz olive oil
1 large onion or 3–4 banana shallots, finely chopped
650g/1lb 7oz beef mince
2 tbsp tomato purée
1 tbsp plain flour
150ml/5fl oz red wine
4 sprigs fresh thyme, leaves only
400ml/14fl oz beef stock
Worcestershire sauce, to taste
salt and freshly ground black pepper
900g/2lb King Edward potatoes, peeled and chopped
115g/4oz butter
125ml/4½fl oz milk
150g/5½oz frozen peas
50g/1¾oz butter

Steps:

  • Heat half of the oil in a large heavy-based pan. Add the onion and cook until softened. Tip it onto a plate.
  • Return the pan to the heat and add the remaining oil. When it's hot, fry the mince, in batches if needed, for 4–5 minutes, or until browned all over. Stir in the cooked onion and tomato purée and cook for 1 minute. Stir in the flour and cook for a further minute. Pour in the red wine, scraping up any caramelised bits with a wooden spoon, and add the thyme.
  • Add the stock and simmer for 45 minutes, or until the mince is tender and the mixture has thickened. Season to taste, and add a few dashes of Worcestershire sauce. Keep warm over a very low heat. Preheat the grill to high.
  • Meanwhile, for the mash, put the potatoes in a pan of salted water and bring to the boil. Reduce the heat and simmer for 12–15 minutes, or until they are tender. Drain and return the potatoes to the pan, then place over the heat for about 1 minute to drive off any excess moisture. Mash well, then add the butter and milk, beating to form a smooth mash. Season to taste.
  • Put the cottage pie filling in a baking dish and spoon the mash over the top. Grill for 8–10 minutes, or until golden-brown.
  • Meanwhile, boil the peas in boiling water in a small saucepan for 3–4 minutes, then drain and add the butter. Serve the cottage pie with the peas.

An Italian twist on an English classic, with sundried tomato, spinach and aubergine, this veggie pie makes a super budget supper

4 tbsp olive oil
2 aubergines, cut into chunks
2 large garlic cloves, crushed
16 sundried tomatoes, roughly chopped, plus 1 tbsp of their oil
2 tsp dried oregano
400g spinach, washed
50g plain flour
400ml milk
125g cheddar, grated, plus extra to top
800g ready-made mashed potato (fresh not frozen)

Steps:

  • Heat oven to 220C/200C fan/gas 7. Heat 1 tbsp of the oil in a large, lidded frying pan or flameproof casserole dish. Cook the aubergine, in two batches, over a high heat for 4-5 mins until golden, adding extra oil as you need to. Return all the aubergine to the pan with the garlic, tomatoes and 1 1/2 tsp oregano and cook for 1 min. Stir in the spinach, put the lid on the pan and leave for a few mins to wilt.
  • Add the flour and stir through until combined. Pour in the milk, stir gently and bring to the boil. Bubble for a few mins, then stir in the cheese and season. Cook until the cheese has melted and the sauce has thickened.
  • Mix the mash with the remaining oregano and spread over the filling. Scatter over a little more grated cheese and bake for 10-15 mins until golden.

    1. In a blender, cover the porcini with 600ml of boiling water.
    2. Trim, wash and slice the leeks 2cm thick, then scrub the carrots, swede and celeriac and chop to roughly the same size.
    3. Drizzle 2 tablespoons of oil into a large casserole pan on a medium heat, strip in the rosemary, fry for 1 minute to crisp up, then remove to a plate with a slotted spoon.
    4. Add the cumin seeds and prepped veg to the flavoured oil, season with sea salt and black pepper, and cook for 30 minutes, stirring regularly.
    5. Meanwhile, peel and roughly chop the potatoes, cook in a pan of boiling salted water for 15 minutes, or until tender, then drain well. Mash with the butter and milk, and season to taste.
    6. Preheat the oven to 190ºC/375ºF/gas 5.
    7. Quarter the onion, add to the porcini in the blender along with the Marmite and tomato purée and whiz until smooth.
    8. Pour into the veg pan and cook for 20 minutes, or until dark and caramelised, stirring regularly and scraping up any sticky bits from the bottom of the pan.
    9. Tip the lentils (juices and all) into the veg pan, bring to the boil, then season to taste.
    10. Spoon over the mash, place on a tray, bake for 30 minutes, or until lightly golden and bubbling at the edges, then sprinkle over the crispy rosemary. Serve with simple steamed seasonal greens – it’s a winner!
