1 can (14-1/2 ounces) diced tomatoes, undrained
2 tablespoons minced fresh parsley
1 tablespoon finely chopped onion
3/4 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup tomato paste
3/4 cup nonfat dry milk powder
3 tablespoons all-purpose flour
2 cups 2% milk

Steps:

  • In a large saucepan, combine the first 6 ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Stir in tomato paste until blended. In a small bowl, combine milk powder and flour; stir in milk until smooth. Gradually stir into soup. Cook and stir until thickened and heated through.

2 Garlic cloves
1.40 cups Olive oil
½ tsp Oregano
½ tsp Basil
½ tsp Thyme
¼ tsp Rosmary
1 pinch Chrushed red pepper
¼ tsp Pepper
6 oz Tomato paste
1 tbsp Brown sugar
28 oz Chrushed tomatoes
3 cups Vegetable broth

Steps:

  • Mince the garlic and add it to a sauce pot along with the olive oil, oregano, basil, thyme, rosemary, red pepper flakes, and freshly cracked pepper.
  • Turn the heat on to medium-low and sauté for about 2 minutes, or until the garlic has softened.
  • Add the tomato paste and brown sugar.
  • Stir until everything is mixed (the oil may stay partially separated).
  • Cook the mixture while stirring continuously for 3-5 minutes, or until the tomato paste takes on a darker, almost burgundy hue.
  • Add the crushed tomatoes and vegetable broth.
  • Whisk the mixture together until smooth.
  • Turn the heat up to medium and heat through, stirring occasionally.
