Drawn butter, otherwise known as clarified butter, is butter from which the milk solids have been removed, intensifying the flavor and leaving a clear, yellow liquid behind that's perfect for dipping.

1 cup unsalted butter (2 sticks)

Steps:

  • Melt butter in a small saucepan over low heat. Cook, without stirring, occasionally skimming and discarding foam that develops on the surface, until the butter begins to become clear and the milk solids sink to the bottom of the pan, 7 to 9 minutes. Remove from heat and carefully skim and discard any remaining foam from the surface. Slowly and carefully pour the clear butter into a heatproof bowl, leaving the milk solids in the pan; discard the solids. Serve warm.

Steps:

  • Melt butter in a small saucepan over low heat until butter foams and solids sink to bottom, about 15 minutes. Remove from heat. Let cool.
  • Carefully skim foam from top, and discard. Pour clear butter into a bowl, leaving any solids in pan; discard solids. (Drawn butter can be refrigerated for up to 1 month.) Serve warm.
