A little lime juice, chipotle, and cumin give this grilled chicken a kick, and a few super-simple techniques guarantee it comes out tender and juicy. First, lightly pound the meat so the thickness is fairly even from end to end. Second, grill the chicken over medium heat — not high, which can torch the outside before the inside is cooked through. Finally, don’t overcook it! (A thermometer makes this part easy.) 1/4 cup coarsely chopped cilantro
2 tablespoons fresh lime juice
2 tablespoons extra-virgin olive oil
1 tablespoon Dijon mustard
1 teaspoon ground cumin
1 teaspoon garlic powder
1/2 teaspoon ground chipotle chile pepper or 1/4 teaspoon cayenne
4 boneless skinless chicken breasts each 8 to 12 ounces, fat trimmed
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Combine cilantro, lime juice, olive oil, mustard, cumin, garlic powder, and chipotle in a medium bowl.
  • Set chicken on a work surface with the smooth side up. With the heel of your hand or a meat mallet, lightly pound the thick portion of each chicken breast piece so the whole breast is an even 1 inch thick. Add chicken to bowl of marinade and turn to coat. Cover and refrigerate 1 to 4 hours.
  • Preheat a grill for medium heat (350° to 450°). Set chicken on a plate and let stand at room temperature 20 minutes. Season chicken with salt and pepper. Following the insertion guide on the Yummly Thermometer app, insert the thermometer horizontally into a chicken breast until the metal is completely covered.
  • Grill chicken with the smooth side down for 3 minutes with the lid closed. Rotate chicken 1/4 turn (this will give you those nice grill marks). Close the lid and grill 2 minutes longer. Turn chicken over (or flip when directed to by the Yummly Thermometer app) and grill until the temperature reaches 160°, 5-10 minutes longer. Transfer to a cutting board and let rest 5 minutes before serving.

I have made this many times it's an wonderful easy fudge to make and no a candy thermometer needed, this is rich so a small piece goes a long way, this freezes well:)

1 1/2 cups sugar (use nothing less than this amount)
2/3 cup evaporated milk
2 tablespoons butter or 2 tablespoons margarine
1/8 teaspoon salt
2 cups mini marshmallows
1 1/2 cups semi-sweet chocolate chips (9 oz)
3/4 cup chopped walnuts (or use pecans or macadamia nuts)
1 1/2 teaspoons vanilla

Steps:

  • Line a 8-inch square pan with foil.
  • In a heavy-duty sauce pan, combine sugar, evaporated milk, butter and salt; bring to a full rolling boil over medium heat, stirring constantly.
  • Boil stirring constantly for 4-5 minutes (this must be timed nothing less than 4 minutes!).
  • Remove from heat; stir in the marshmallows, chocolate chips and vanilla, stirring vigorously until marshmallows are completely dissolves.
  • Stir in nuts.
  • Pour mixture into prepared foil-lined pan.
  • Refrigerate for 2 hours or until firm.
  • Lift from pan (with foil) remove foil; cut in squares.
