THAI COCONUT-MANGO STICKY RICE RECIPE - FOOD.COM

Thai Coconut-Mango Sticky Rice Recipe - Food.com image

I was trying to match a dessert sold at a local Thai restaurant; this is pretty close, but not exact. The real thing uses glutinous rice, but since that is not available in most of the U.S., this can be a variation for people without it.

Total Time 35 minutes

Prep Time 5 minutes

Cook Time 30 minutes

Yield 3 serving(s)

Number Of Ingredients 4

1/2 cup jasmine rice or 1/2 cup other sweet asian rice
1 (14 ounce) can coconut milk (you can use the light kind if you want, it just makes it a little less rich)
1/2 cup sugar
1 mango, sliced

Steps:

  • Rice: Cook rice according to package directions, but substitute coconut milk for half of the water, and add half the sugar.
  • It should be fairly dry when you finish cooking it, without any liquid visible in the pot.
  • Sauce: In a medium saucepan, boil the rest of the coconut milk with the second half of the sugar.
  • Keep this at a full boil until the rice is cooked, or until it reaches a thick, syrupy consistency.
  • Presentation: Arrange the cooked coconut rice in a bowl or plate with the mango slices in some kind of pretty formation and dribble a bit of the sauce over the whole thing.

  • To Prep For the sticky rice, rinse it 6 - 10 times, making sure most of the starch is removed until the water is clear. Soak the rice in water for about 6 hrs. To Cook Using a steamer basket or other type of steamer, steam the sticky rice for about 15-20 mins until fully cooked. Set aside. To prepare the coconut cream mixture, add coconut cream into a pot over medium heat and gently stir in one circular direction. Add sugar and salt, and keep stirring until fully dissolved. When the coconut cream mixture comes to a boil, turn off the heat. Put the fresh sticky rice into a mixing bowl, and begin to slowly add in the coconut cream and sugar mixture. Stir constantly to slowly incorporate coconut mixture into the rice. Once all combined, the rice should look glossy with a grainy pudding-like texture. The hot sticky rice will absorb all the coconut milk. In a separate saucepan add the other portion of coconut cream with salt and stir on low heat. Bring it to a boil, then turn off the heat and set aside in a bowl. This will be served alongside the mango sticky rice as a topping. For the yellow mung beans using low heat and with a frying pan or wok, dry-fry the yellow mung beans for a few minutes until they turn golden crispy. Set this aside as a topping. For the mango, first peels off the skin, then cut off the meat from either side of the mango seed and slice the mango. On a serving plate, add a portion of sticky rice, top it with mango and a sprinkling of crispy mung beans, and then drizzle coconut cream all over.

THAI BEEF & MANGO FRIED RICE RECIPE | EATINGWELL
In this healthy fried rice recipe, bell peppers, mango and basil are tossed with savory fish sauce and fresh basil for a delicious one-bowl dinner. If you don't have leftover cooked rice on hand, be sure to thoroughly cool your rice before adding it to the wok--if it's too warm, it creates too much steam and sticks to the wok. To quickly cool warm rice, spread out on a large baking sheet and refrigerate while you prep the rest of your ingredients, about 15 minutes.
