MASHED SWEET POTATOES WITH MAPLE SYRUP AND CHIPOTLES ...
I don't care for the sweet potatoes topped with marshmallows, but a good friend fixed these for Thanksgiving dinner last year and I loved them! This is a recipe from Bobby Flay.

Steps:
- Put oven rack in middle position and preheat to 375°.
- Bake potatoes until soft, 35 - 40 minutes for medium potatoes, 1 hour for large.
- Meanwhile, combine remaining ingredients in a small bowl; whisk until smooth.
- When potatoes are tender, remove from oven, slice in half, and remove centers of potatoes.
- Mash and add maple syrup mixture.
- Taste for seasoning and transfer to a warm serving bowl.

- Heat oven to 400°F. Have ready a rimmed baking sheet and 1 1/2-qt shallow baking dish. Pierce each potato once with a fork and place on a baking sheet. Bake 50 min to 1 1/4 hours until very soft. When cool enough to handle, split potatoes and scrape pulp into a large bowl. Add butter, syrup, salt and pepper; mash until smooth. Spoon into baking dish. Cover with foil. Heat oven to 350°F. Bake 30 minutes until hot. Remove foil. Sprinkle with pecans, then marshmallows; bake 6 to 7 minutes until marshmallows are slightly toasted.

- When potatoes are tender, remove from oven and slice in two lengthwise. Scoop hot flesh into a potato ricer or food mill, and purée into bowl with other ingredients. Stir with rubber spatula to combine. Potatoes should be light and fluffy. Taste for seasoning, transfer to warm serving bowl and serve immediately.

Reduce heat; cook for 30-45 minutes or until potatoes can be easily pierced with the tip of a sharp knife. , When cool enough to handle, peel potatoes and cut into wedges. Place in an ungreased 15x10x1-in. baking pan. Combine the brown sugar, cinnamon and nutmeg; sprinkle over potatoes. Dot with butter; drizzle with syrup. , Bake, uncovered, at 375° for 25-30 minutes or until bubbly, basting with sauce occasionally.
