I saw the movie, The Help, this weekend and it was excellent. Then the sermon on Sunday included a reference to it. I wanted to have the recipe for Minnie's pie - NOT the one she made ONLY for Hilly!!!!!. Maybe someone else wants it, so here it is.

Total Time 1 hours

Prep Time 10 minutes

Cook Time 50 minutes

Yield 1 pie

Number Of Ingredients 7

1 1/4 cups sugar
3 1/2 tablespoons cocoa
1/4 cup butter, melted
1 teaspoon vanilla
5 ounces Pet milk (evaporated)
2 eggs
1 pie crust, uncooked

Steps:

  • Preheat oven to 325°F.
  • Mix everything together in one big bowl.
  • You don’t have to bake the crust first, prick the bottom of it.
  • Pour filling into crust.
  • Bake for about 50 minutes. Let the pie set for a long while once it comes out of the oven. I think this definitely tastes better room temperature.
  • If you’d like, serve with a big scoop of ice-cream, some fruit, a little whipped cream, or straight out of the pie plate!

Newspaper columnist Lee Ann Flemming, one of the best bakers in Greenwood, made 53 chocolate pies during filming, including 12 vegan and gluten-free versions she prepared in just one day for actress Bryce Dallas Howard. Number Of Ingredients 9

1 packaged pie dough crust, such as Pillsbury
1 1/2 cups sugar
3 tablespoons unsweetened cocoa powder
4 tablespoons unsalted butter, melted
2 large eggs, beaten
3/4 cup evaporated milk
1 teaspoon pure vanilla extract
1/4 teaspoon salt
Whipped cream, for serving

Steps:

  • Preheat the oven to 350°. Ease the pie crust into a 9-inch pie plate and crimp the edges decoratively. Prick the crust lightly with a fork. Line the crust with foil or parchment paper and fill with pie weights or dried beans. Bake for 15 minutes or until set. Remove the foil and weights and bake for about 5 minutes longer, just until the crust is dry but not browned.
  • Meanwhile, in a bowl, whisk the sugar with the cocoa powder, butter, eggs, evaporated milk, vanilla and salt until smooth.
  • Pour the filling into the pie shell and bake for about 45 minutes, until the filling is set around the edges but a little jiggly in the center. Cover the crust with strips of foil halfway through baking. Transfer the pie to a rack and let cool completely before cutting into wedges. Serve with whipped cream.

  • In a medium sized, cool saucepan, mix water, cocoa, and cornstarch with a whisk until all the lumps are gone, making a paste. Stir in condensed milk and egg yolks. Heat to just under a boil and stir until it’s thick. Reduce heat to low and stir in butter. Add in your good vanilla, and keep stirring well. Turn off the heat and let it cool some. Pour into a prebaked pie shell, storebought if that’s how you do things. Let the pie set-up in a cool spot, like a plug-in refrigerator, covering with wax paper so you don’t get a skin. Dollop cream on top or top with meringue. Yield: 1 9 inch pie, 6-8 servings

  • Combine the sugar, cornstarch, and salt in a medium saucepan. Stir or whisk together.  Pour in milk and egg yolks, and whisk together. Stir over medium heat until the mixture just barely comes to a boil and becomes thick, about 6-8 minutes (maybe less, maybe more; just watch it!) The second it starts to bubble and thicken (note: It should be thick like pudding!) remove it from the heat. Add the chocolate, vanilla, and butter, and stir until everything is beautifully combined.  Pour the pudding into the pie crust (if there is extra, spoon it into small dishes) and place in the fridge to chill for 4 hours uncovered. Cut into slices and serve with whipped cream!
