By the age of 12 John Heinz was peddling produce from his family's garden in post-Civil War Pittsburgh. By age 25, he and a friend launched Heinz & Noble to sell bottled horseradish in clear glass bottles that revealed its purity. Henry's pickling empire grew as he added jams, jellies, and condiments to the line, including ketchup, which was added in 1876. You'll still see the famous Heinz pickle logo on every product, and if you want a quick tip on how to get the thick stuff out of the bottle easily, don't pound on the backside like a maniac. Instead Heinz recommends a good smack to the embossed "57" found on the neck of every bottle. Today Heinz is the world's largest tomato processor, with the famous ketchup bottles sitting on a shelf somewhere in over half of U.S. households. 6 oz can tomato paste
1/4 cup honey (or agave)
1/2 cup white vinegar
1/4 cup water
1 tsp sugar
3/4 tsp salt
1/4 tsp onion powder
1/8 tsp garlic powder

Steps:

  • Combine all the ingredients in a medium saucepan over medium heat; whisk until smooth.
  • When it comes to a boil, reduce heat to low and simmer for 20 minutes, stirring often.
  • Remove from heat and cover until cool.
  • Chill and store refrigerated in a covered container.

    1. Place all the vegetables in a large heavy-bottomed saucepan with a big splash of olive oil and the ginger, garlic, chilli, basil stalks, coriander seeds and cloves. Season with a teaspoon of black pepper and a good pinch of sea salt.
    2. Cook gently over a low heat for 10 to 15 minutes, or until softened, stirring every so often. Add all the tomatoes and 350ml of cold water. Bring to the boil and simmer gently until the sauce reduces by half.
    3. Add the basil leaves, then whiz the sauce in a food processor or with a hand blender and push it through a sieve twice, to make it smooth and shiny. Put the sauce into a clean pan and add the vinegar and the sugar.
    4. Place the sauce on the heat and simmer until it reduces and thickens to the consistency of tomato ketchup. At this point, correct the seasoning to taste.
    5. Spoon the ketchup through a sterilized funnel into sterilized bottles, then seal tightly and place in a cool dark place or the fridge until needed – it should keep for six months. Great served with steak and chips.

SERIOUSLY GOOD HOMEMADE KETCHUP - INSPIRED TASTE
Ketchup is very simple to make and is so much more flavorful than anything you can buy at the store. We don’t like it to be too sweet and like to add only 3 to 4 tablespoons of sugar to the pot, but if you prefer, add a little more to make the ketchup sweeter. The sweetness of tomatoes can range, too, so it really is best to taste the ketchup and add the sugar to taste. You can also play around with flavors, this version has a kick of spice from crushed red pepper flakes, but you could add fresh jalapeño, chipotle or hot sauce to transform it into spicy ketchup. Other spices are nice, too — try curry powder or garam masala for an Indian-spiced version.
