1 medium onion, thinly sliced
2 garlic cloves, minced
1 to 2 tablespoons vegetable oil
1 pound fully cooked kielbasa or Polish sausage, halved lengthwise and sliced
1 package (16 ounces) frozen stir-fry vegetables, thawed
1 can (8 ounces) bamboo shoots, optional
2 tablespoons cornstarch
1/2 teaspoon cayenne pepper
1 can (14-1/2 ounces) beef broth
2 tablespoons soy sauce
Hot cooked rice

Steps:

  • In a large skillet or wok, stir-fry onion and garlic in oil until tender. Add sausage, vegetables and bamboo shoots if desired; stir-fry until heated through. Combine cornstarch, cayenne, broth and soy sauce until smooth; add to the pan. Bring to a boil; cook and stir for 2 minutes. Serve over rice.

I had 6 sausages in the fridge and a pepper, mushrooms and some green onions so i decided to cook up a stir-fry

Prep Time 10 minutes

Cook Time 20 minutes

Number Of Ingredients 9

6 Italian sausages (i used mild)
1 orange bell peppers or 1 yellow bell pepper
8 large mushrooms
1 green onion
2 tablespoons soy sauce
2 tablespoons cornstarch
1/2 cup chicken stock
salt and pepper
olive oil

Steps:

  • Put about 2 tablespoons oil in a pan and place the Italian sausages in it.
  • Spice with pepper.
  • Cook on low until fully cooked.
  • Take out the sausages and put another tablespoon of oil in the pan.
  • Stir-fry the mushrooms, peppers and onion for 3-5 minutes.
  • Mix together soy sauce, cornstarch and chicken stock and place into pan.
  • After the sauce thickens add the sausages and cook for another minute.
