An easy recipe that uses canned goods for convenience. Chicken with wild rice, cheese, pimientos and onions. Serve with a tossed salad for an elegant dinner.

Number Of Ingredients 6

2 (6 ounce) packages uncooked long grain and wild rice
2 cups cooked, cubed chicken breast meat
1 (10.75 ounce) can condensed cream of mushroom soup
1 (4 ounce) jar diced pimento peppers, drained
1 onion
1 cup shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Prepare rice according to package directions.
  • In a medium bowl, toss together the cooked chicken, prepared rice, soup, pimientos, and onion. Transfer to a lightly greased 9x13 inch baking dish. Stir in 1/2 cup of the cheese, then sprinkle the other 1/2 cup of cheese on top.
  • Place in preheated oven briefly, to melt.

The creamy, sweet comfort of old-fashioned rice pudding is made easy in the slow cooker! Mix cooked rice, sugar, evaporated milk and warm spices, and cook low and slow until tender, soft and full of flavor. Add an extra dash of cinnamon or a handful of raisins, and cozy up to a bowlful of this classic dessert.

Number Of Ingredients 7

1 1/2 cups uncooked long-grain white rice (not instant or precooked)
3 cups water
1/2 cup sugar
1 teaspoon ground cinnamon
2 tablespoons butter, melted
2 cans (12 oz each) evaporated milk
1 teaspoon vanilla

Steps:

  • Spray inside of 3 1/2-quart slow cooker with cooking spray.
  • In 2-quart saucepan, heat rice and water to boiling over medium heat. Cover; reduce heat to low, and cook 20 to 25 minutes or until rice is tender and liquid is absorbed.
  • Add cooked rice to slow cooker; stir in remaining ingredients until well mixed.
  • Cover; cook on Low heat setting 2 hours. Remove cover; stir. Cover; cook 30 to 40 minutes longer or until most of liquid is absorbed. Turn off heat. Remove cover; stir. Let stand 15 minutes before serving. Serve warm.

Reduce heat; cover and simmer for 60-70 minutes or until rice is tender and liquid is absorbed. , Meanwhile, in a nonstick skillet, saute onion and celery in oil until tender. Add garlic; cook 1 minute longer. Stir in the apricots, almonds, 1/3 cup apricot nectar, 1/4 cup wine, 1/4 teaspoon salt, poultry seasoning and 1/8 teaspoon pepper. Stir into cooked rice. , Spoon mixture into four mounds in a shallow roasting pan coated with cooking spray; top each with a Cornish hen half. Cover and bake at 375° for 45 minutes. Uncover; bake 15-20 minutes longer or until a thermometer reads 180°. , In a large saucepan, combine remaining nectar and wine. Bring to a boil; cook for 5-7 minutes or until reduced to 1/2 cup. Add the vinegar, cinnamon and remaining salt and pepper. Reduce heat; cook and stir over medium-low heat for 1 minute. Serve with hens and rice.
