WILD RICE CHICKEN RECIPE | ALLRECIPES

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Prepare rice according to package directions.
- In a medium bowl, toss together the cooked chicken, prepared rice, soup, pimientos, and onion. Transfer to a lightly greased 9x13 inch baking dish. Stir in 1/2 cup of the cheese, then sprinkle the other 1/2 cup of cheese on top.
- Place in preheated oven briefly, to melt.

- Spray inside of 3 1/2-quart slow cooker with cooking spray.
- In 2-quart saucepan, heat rice and water to boiling over medium heat. Cover; reduce heat to low, and cook 20 to 25 minutes or until rice is tender and liquid is absorbed.
- Add cooked rice to slow cooker; stir in remaining ingredients until well mixed.
- Cover; cook on Low heat setting 2 hours. Remove cover; stir. Cover; cook 30 to 40 minutes longer or until most of liquid is absorbed. Turn off heat. Remove cover; stir. Let stand 15 minutes before serving. Serve warm.

Reduce heat; cover and simmer for 60-70 minutes or until rice is tender and liquid is absorbed. , Meanwhile, in a nonstick skillet, saute onion and celery in oil until tender. Add garlic; cook 1 minute longer. Stir in the apricots, almonds, 1/3 cup apricot nectar, 1/4 cup wine, 1/4 teaspoon salt, poultry seasoning and 1/8 teaspoon pepper. Stir into cooked rice. , Spoon mixture into four mounds in a shallow roasting pan coated with cooking spray; top each with a Cornish hen half. Cover and bake at 375° for 45 minutes.
