Yes, the name says it all. Make these every year during the time of pumpkin-flavored-everything; other wise known as "Autumn."

2 cup(s) all purpose flour
1 1/2 cup(s) white whole wheat flour (all purpose may be substituted)
2 cup(s) light brown sugar, packed
1/3 cup(s) granulated sugar
2 teaspoon(s) baking soda
1 teaspoon(s) baking powder
1 teaspoon(s) salt
2 - heaping tbsps. pumpkin pie spice
1 -15 ounce(s) can pumpkin puree (this measures to be just under 2 cups)
1 cup(s) vegetable oil
1/3 cup(s) honey
1/3 cup(s) water
1/2 cup(s) walnuts, chopped
STREUSEL TOPPING
1/2 cup(s) all purpose flour
1/2 cup(s) granulated sugar
1/2 teaspoon(s) salt
2 tablespoon(s) cinnamon
2 tablespoon(s) butter (sometimes, i double this amount to make the topping extra good.)

Steps:

  • Preheat oven to 350 degrees F. Place a rack in the center of the oven. Grease and flour two loaf pans and set aside.
  • In a large bowl, whisk together flours, sugars, baking soda, baking powder, salt and spices. In a medium bowl, carefully whisk together pumpkin puree, oil, honey and water. Add walnuts.
  • Add the wet ingredients to the dry ingredients and use a spatula to fold all of the ingredients together. Make sure to scrape the bottom of the bowl well, incorporating all the dry ingredients.
  • Divide the dough between the two greased pans and sprinkle with the streusel topping. Bake for 1 hour to 1 hour and 15 minutes, or until a skewer inserted in the center comes out clean. Remove from the oven. Let rest in the pans for 15 minutes, then invert onto a cooling rack.

  • For the cookie dough: In a medium bowl, whisk together the butter, brown sugar, pumpkin puree and vanilla until well combined.  In a separate medium bowl, whisk together the flour, pumpkin pie spice, cream of tartar, baking soda, salt and baking powder.  Add the flour mixture to the pumpkin mixture and stir until all the dry ingredients are well mixed. Cover the bowl and refrigerate until the dough is firm, at least 4 hours or overnight.  Preheat the oven to 350°F. Line 2 cookie sheets with parchment paper. For the spiced sugar: Stir together the granulated sugar and pumpkin pie spice in a small bowl.  Scoop the dough into balls, about 2 tablespoons each. Roll each ball in the spiced sugar until well coated and arrange at least 2-inches apart on the prepared baking sheets.  Bake until the cookies are puffed, set around the edges and begin to crack on top, 11 to 13 minutes. Let the cookies cool on the baking sheets for 5 minutes. Transfer to a wire rack to cool completely, about 30 minutes.
