1 tablespoon plus 1 tsp sugar
¼ teaspoon red pepper flakes
½ seedless cucumber
¾ pound small chicken breast halves, boneless pork chops or steak (see Note)
¾ teaspoon cornstarch
1 cup sweet pepper strips
½ cup shredded carrot
3 scallions, trimmed and sliced

½ cup lime juice
¼ cup toasted sesame oil
2 tablespoons Thai or Vietnamese fish sauce
2 tablespoons sugar
1 teaspoon salt
1 teaspoon Sriracha
Toppings
Pâté, roast chicken, or seasoned, cooked tofu
Shredded carrots
Slivered green onions
Chopped cilantro
Diced cucumber
Sliced jalapeño
Toasted sesame seeds
1 to 2 limes, cut in wedges

Steps:

  • Cook rice noodles according to package directions. In a large bowl, whisk together lime juice, sesame oil, fish sauce, sugar, salt, and Sriracha. Add cooked noodles and toss to coat.
  • Arrange noodles in individual bowls, topped with choice of protein, then garnish with carrots, green onions, cilantro, cucumber, and jalapeños. Serve with additional sauce on side and lime wedges.
