i found this on about.com and wanted to store it here so i did not lose it -- i never seem to have enough heavy cream and this is so much cheaper and faster.

3/4 cup milk
1/3 cup butter

Steps:

  • Melt the butter.
  • Pour it into the milk, and stir.
  • Use in place of one cup of heavy cream.
  • Note: This substitute will not whip.
  • Tip: If you use low-fat milk, add a tablespoon of flour to the mixture to thicken.

In just a few minutes, you can make homemade whipped cream.  Pure and delicious!

Number Of Ingredients 3

2 cups of DairyPure Heavy Whipping Cream
2 tablespoons granulated or confectioner's sugar
1 teaspoon of vanilla extract or liqueur

Steps:

  • In a chilled glass bowl, add sugar to 2 cups DairyPure Heavy Whipping cream.  With a whisk or hand mixer, incorporate sugar into heavy whipping cream until it begins to thicken, leaving visible trails. Continue to whip it until soft peaks start to form.  At this point you can fold in liquid flavorings such as a 1/2 teaspoon of vanilla extract or liqueur per cup of cream. Serve immediately or keep refrigerated and remix for a minute or two when ready to serve.

  • 1. In the bowl of an electric mixer fitted with the whisk attachment, whip the heavy cream to medium peaks. With the machine still running, add the sweetened condensed milk in a slow, steady stream and whip until it's incorporated. Add the vanilla extract and whip to combine. 2. Use a silicone spatula to gently fold any mix-ins into the mixture, taking care not to deflate it. (To fold, insert the spatula into the middle of the bowl and gently scrape toward you from the bottom up, in the shape of the letter "J". Rotate the bowl about 90 degrees clockwise and repeat the folding motion until the mix-ins are evenly incorporated.) 3. Pour the mixture into a 9-inch-by-5-inch loaf pan. Cover it with plastic wrap and freeze until the ice cream is scoopable, at least 3 hours and up to overnight. For best results, take the ice cream out of the freezer a few minutes before you want to scoop it.

Remove 2 tablespoons of the cookie crumbs and reserve in a small bowl. 3. Add the confectioners' sugar to the food processor and pulse to combine. Add the butter and process until the mixture is light and fluffy, about 1 minute. Scrape the bowl of the food processor well. 4. Add the flour and salt, and pulse until the dough comes together, about 30 seconds. Add the vanilla and process until combined. 5. Divide the dough in half and then form each piece into an inch-thick disk. On a lightly floured surface, roll out the dough to ? inch thick. Cut the dough into circles using a round fluted cookie cutter and then transfer to the prepared baking sheets. 6. Bake until the cookies start to brown at the edges, 15 to 17 minutes. Cool completely. 7. Make the Glaze: In a medium bowl, whisk the confectioners' sugar and cream until a thick glaze forms. Working one at a time, spoon 1 teaspoon of glaze on top of each cookie. Let the glaze set for 5 minutes, then sprinkle the reserved cookie crumbs on top of each cookie. The glaze will fully set in another 10 to 15 minutes and then the cookies are ready to serve.
