  • Line the bottoms of two 8-inch cake pans with parchment paper and lightly butter. Sift the flour, cocoa, baking powder, baking soda, and salt together. Stir the buttermilk, pumpkin, and vanilla extract together in a small bowl. Beat the butter and sugars together using an electric mixer on medium speed until light and fluffy. Beat in the eggs and yolk, one at a time. Reduce mixer speed to low and alternately beat in the flour and buttermilk mixtures in thirds. Pour the batter into the prepared pans. Bake until a tester, inserted in the center, comes out clean--about 35 minutes. Cool layers completely before icing. Step 1: Frost Beat 6 ounces softened cream cheese using a mixer set on medium-high speed until fluffy. Add 1 1/2 cups confectioners' sugar, 2 1/4 teaspoons cocoa, 1/4 teaspoon cinnamon, and 3/4 teaspoon vanilla and beat on low speed until well combined. In a separate bowl, beat 1 1/2 cups heavy cream with 3/4 cup confectioners' sugar and a scant 1/4 teaspoon orange food coloring on medium-high to soft peaks. Gently fold the whipped cream into the cream cheese mixture until well combined. Spread 1 cup frosting between the two layers and use the remaining frosting to ice the top and sides of the cake. Chill 30 minutes and proceed to step 2. Makes 3 cups. Step 2: Glaze Place 4 ounces of chopped bittersweet chocolate, 1 tablespoon cold unsalted butter, and 3 tablespoons corn syrup in a medium heatproof bowl. Bring 1/2 cup heavy cream to a boil, pour it over the chocolate, and let sit for 3 minutes. Gently stir, using a whisk, until smooth. Let sit for 3 to 5 minutes, until the glaze thickens slightly. Pour the glaze onto the center of the frosted cake and smooth out to the edges to allow the glaze to drop over the sides. Makes 1 cup.

This rich and decadent spiced pumpkin cake is just the thing to serve for an autumn celebration, Thanksgiving or otherwise. Chocolate chips and chopped pecans are added to the pumpkin batter for extra sweetness and a bit of welcome crunch. For those who like to plan ahead, it can be made and frozen – iced and all. Just put the entire finished cake on a plate or a baking sheet, unwrapped, and freeze it overnight until it is hard. Then it can be wrapped without damage to the frosting, and returned to the freezer. Layers can also be wrapped well and stored, to be iced later.

PUMPKIN-CHOCOLATE CHEESECAKE | MARTHA STEWART
To make this knockout dessert appear, you'll need reinforcements: a springform pan, a food processor (to blitz the chocolate wafers for the crust), and a mixer (to beat the cheesecake ingredients). After that, just a few simple steps result in a firm, delicately flavored pumpkin filling and a deliciously intense chocolate crust. Serve it as is, or pour a stove-top chocolate-caramel glaze on top for a glossy, glamorous finish.

  • Make pumpkin layers: Heat oven to 350°F. Lightly grease two 8-in. cake pans; line bottoms with parchment paper. In medium bowl, whisk flour, pumpkin pie spice, baking powder, baking soda, and salt. In second bowl, combine pumpkin puree, buttermilk, and vanilla. In large bowl of electric mixer, beat butter and sugars on medium speed until light and fluffy, about 3 min. Reduce speed to low and beat in eggs, 1 at a time. Alternate adding flour and pumpkin mixtures, beating until just smooth; fold in chocolate chips.  Divide batter evenly between cake pans. Bake until wooden pick inserted in center comes out clean, 35 to 45 minutes. Transfer to wire rack; let cool 5 minutes before removing from pans to cool completely. Meanwhile, make frosting: Using electric mixer, beat cream cheese on medium until smooth. Mix in 3 cups confectioners’ sugar. Add vanilla.  In clean bowl, beat cream and remaining 1 cup confectioners’ sugar until stiff peaks form. Mix large spoonful of whipped cream into cream cheese mixture; then, in three additions, fold remaining whipped cream into cream cheese. Refrigerate at least 1 hour.  Place 1 cake layer on serving plate, flat side up. Spread 1 cup frosting on top and sandwich with second cake layer, flat side on top. Use 1 cup frosting to cover entire cake in thin layer (crumb coat). Refrigerate cake at least 30 minutes. Transfer 1½ cups frosting to bowl; tint orange. Transfer ¼ cup orange frosting to second bowl and add ½ cup white frosting, mixing to make a paler shade of orange.  Spoon both shades of orange frosting side by side into large piping bag fitted with star piping tip, then refrigerate at least 20 min.  Tint ¼ cup remaining white frosting brown and transfer to piping bag fitted with small round tip. Chill at least 20 minutes. Tint ¼ cup remaining white frosting green and transfer to piping bag fitted with small round tip. Chill at least 20 minutes. Frost cake with remaining white frosting, swirling top with offset spatula. Top with sprinkles if desired.  Starting at bottom of cake, pipe pumpkin shapes with orange frosting. Using brown and green, pipe stems and leaves. Refrigerate until ready to serve.
