Protein Waffles are great for any meal. We're partial to them at brinner, especially!

1/2 cup full fat cottage cheese
1 large egg
1 tablespoon unsalted butter, melted
5 tablespoons unsweetened vanilla almond milk
1/2 cup oat flour, (54g)
1/4 cup vanilla whey protein powder, (20g)
1/4 teaspoon baking powder
pinch of salt

Steps:

  • Spray your waffle maker with cooking spray and heat on the highest setting.                               In a large bowl, whisk the cottage cheese, egg, butter and milk until mixed.        In a separate bowl, whisk the oat flour, protein, baking powder and salt.               Add the dry ingredients into the wet ingredients and stir until combined * Fill a lightly heaping 2/3 cup measuring cup with the batter and pour onto the griddle, spreading out slightly. Cook until desired level of crispiness has been achieved – I like mine at 2 cycles of the waffle maker. If your batter has absorbed some of the moisture, add 1 Tbsp of milk and whisk before making the other waffle.              Top as desired and DEVOUR!

1 scoop (30g) protein powder
1 tbsp butter
1/4 tsp baking powder
1 large egg
1/4 tsp Pink Himalayan Salt
liquid (water, almond milk, flax milk) (to thin out the batter)

Steps:

  • Melt the butter in a pyrex measuring cup or small mixing bowl.
  • Add the rest of the ingredients and combine using a fork.
  • Preheat you waffle iron and pour 1/2 of the recipe into the iron. Close the lid and cook until cooked and browned. Repeat with remaining batter.
  • Serve immediately with additional butter or your favorite sugar free maple syrup.
