4 (4 ounce) boneless skinless chicken breast halves
1 1/2 cups water
1 cup diced onion
1/2 cup chablis or 1/2 cup other dry white wine
1/2 cup sliced carrot
1/2 cup sliced celery
10 black peppercorns
4 sprigs fresh parsley
4 sprigs fresh thyme
2 bay leaves

Steps:

  • Place chicken in a large saucepan; add water and remaining ingredients, and bring to a boil.
  • Reduce heat, and simmer, uncovered, for 5 minutes or until chicken is done.
  • Remove from heat, let stand, uncovered, 20 minutes.
  • Place chicken and poaching liquid in a large bowl; cover and chill, or, put just the chicken in freezer bags and freeze for another time.

Cooking chicken breasts gently in a flavorful broth makes them moist, tender -- and healthy!

1/2 medium yellow onion, halved
1 medium carrot, cut into thirds
1 celery stalk, cut into thirds
2 garlic cloves, peeled
1/2 lemon, sliced (optional)
1 teaspoon coarse salt
1 teaspoon black peppercorns
3 sprigs thyme or parsley
4 boneless, skinless chicken breast halves, (about 8 ounces each)

Steps:

  • In a large, straight-sided skillet or pot, combine all ingredients except chicken; cover with water by 1/2 inch. Bring to a boil over high. Add chicken and return to a boil. Cook 3 minutes, then cover skillet and remove from heat. Let stand until chicken is cooked through, 15 to 18 minutes, flipping halfway through. Remove chicken from poaching liquid immediately.

Whisk in flour and cook until golden, 1 minute. Slowly whisk in wine while stirring and bring to a simmer. Cook until wine has reduced, about 2 minutes, then gradually stir in cream, water, and thyme and simmer until bubbly and thickened, 3 to 4 minutes. Slice and serve chicken with cream sauce. Garnish with red pepper flakes and lemon zest, if desired.
