Lettuce wraps are everything. Absolutely everything.

1/3 c. Hoisin Sauce
1/3 c. Soy Sauce
2 tbsp. Grated Ginger
1 tbsp. Sriracha
1 tbsp. Rice Wine Vinegar
3 cloves Garlic, Grated
2 whole Boneless, Skinless Chicken Breasts, Cut Into Strips
1/4 c. Chopped Cilantro
8 whole Butter Lettuce Leaves
1 c. Bean Sprouts
1 c. Thinly Sliced Red Cabbage
1 c. Julienned Carrots
1 c. Cucumber Slices
2 tbsp. Chopped Peanuts
1 c. Cooked Thin Rice Noodles
Sweet Chili Sauce, For Serving

Steps:

  • For the chicken and marinade: Mix the hoisin sauce, soy sauce, grated ginger, Sriracha, rice wine vinegar and grated garlic in a large bowl or resealable plastic bag. Add the chicken strips and marinate, refrigerated, for 2 hours.Heat a grill pan over high heat.Remove the chicken strips from the marinade and grill until cooked through, about 2 minutes per side. Transfer to a serving platter and sprinkle with the peanuts and cilantro.For the lettuce and fillings: Set out the lettuce, bean sprouts, cabbage, carrots, cucumbers and rice noodles on the serving platter.To assemble, use the butter lettuce leaves to contain the chicken and fillings. Add some chili and hoisin sauce, then roll them up and eat!

Number Of Ingredients 8

2 whole Boneless, Skinless Chicken Breasts
1/2 c. Bottled Balsamic Vinaigrette
1 whole Package (12 Ounces) Mixed Salad Greens
12 whole Medium Strawberries, Hulled And Quartered
4 whole Green Onions, Sliced (White And Light Green Parts)
1/4 c. Pecans, Chopped
4 oz. weight Goat Cheese Crumbled
6 whole Large Whole Wheat Tortillas

Steps:

  • Place the chicken breasts in a large plastic storage bag. Seal the bag, leaving a small opening, then use a rolling pin to pound the breasts until they're a uniform thickness. Pour in half the balsamic vinaigrette, then seal the bag and marinate in the fridge for 1 hour.After the chicken has marinated, grill it until it's done in the middle, about 5 minutes per side. Remove from the heat and set aside to cool slightly. Dice up the chicken when it's cool enough to handle. Add the salad greens to a large bowl. Add half of the remaining dressing and toss it to coat the greens. Add more if it needs it. Add the strawberries, chicken, green onions, and pecans. Toss it gently a few times until it's all combined. Top with crumbled goat cheese and toss a couple of times. Place an equal amount of salad down the middle of each tortilla. Roll up, then slice in half. Serve wraps with chips and extra strawberries.

  • In the jar of a blender, combine the ginger, garlic, tamari, hoisin, vinegar, sesame oil, chili and honey. Puree until smooth. In a crockpot, combine the chicken breasts, red onion and orange quarters. Pour the sauce over the top and set the crockpot on high for 4 hours.When there is 1 hour left, add the water chestnuts and stir the contents. When the cooking time is up, gently remove the skin and bones from the chicken. It will absolutely fall apart, so this will be easy. Shred everything and stir it together. Season to taste with kosher salt. Transfer to a serving bowl and mix in 1/2 cup green onions and the sesame seeds.Combine the remaining ½ cup of green onion, bell pepper and the fresno chili. Set out with the lettuce leaves, cucumber slices and the fresh mint, Thai basil, and cilantro.To assemble, pile the lettuce leaves with a spoonful of chicken and the cucumber, fresh herbs and bell pepper/green onion mixture. (I also use a little dash of Sriracha sometimes.) Eat immediately!

I like this recipe because it uses already prepared ingredients found in your produce department with the packaged salad greens. Great egg rolls without all the work for those after work meals. (of which I need often) Leave the chicken out for vegetarian egg rolls or substitute shrimp for seafood eggrolls. Keep the oil hot and fry quickly to keep egg rolls from becoming greasy. They only need to brown and crisp, not cook. Frying only 3 or 4 at a time while rolling the others will make it easier to keep track of both the rolling and frying at the same time (unless you have a helper in your kitchen to do one or the other). Serve with my easy sweet and sour dipping sauce (recipe #112947) for a real taste treat. Since preparation (rolling) and cook time can be done at the same time, times are approximate.
