How To Store And Freeze Dehydrated Tomatoes For Maximum Taste image

To store dehydrated tomatoes, put them in an airtight container in the refrigerator. They'll last up to 18 months. Alternatively, you can cover the tomatoes with oil and keep them in a sealed jar in the refrigerator. In oil, the tomatoes will stay supple, but won't last as long.

1 portion dehydrated tomatoes

Steps:

  • Select a suitable sized jar with an airtight lid. I like to use jars with a clip-on lid.
  • Dry the tomatoes and condition them to check the moisture level.
  • Dip each tomato in white wine vinegar. This helps to acidify them and prevent harmful bacteria from growing.
  • Put the tomatoes in the jar.
  • Add a splash of red wine. Red wine further acidifies the mixture and also adds flavor (optional).
  • Cover the tomatoes in olive oil. Leave it for 5 minutes to settle and add more oil if needed. The tomatoes need to be totally covered.
  • Add seasonings (optional).
  • Seal the jar and place it in the refrigerator. I recommend keeping the oil-packed dried tomatoes in the fridge to minimize the risk of any bacteria developing and to slow the oil from becoming rancid. The oil will solidify around the tomatoes but will melt in around 20 minutes when you take them out.
