Homemade Pink Burger Buns with Chia – In Love with Bliss image

Fluffig weiche Burgerbrötchen, die nicht bröseln und die jeden Burger perfekt machen. Rote-Bete-Saft macht die Brötchen pink und auch ein bisschen gesünder. Einfach die perfekten Burger Buns ??

500 g Mehl*
1 EL Chia
1 TL Meersalz
1 TL Guarkernmehl (optional)**
220 ml Rote-Bete-Saft
1 TL Rohrohrzucker
1 Würfel frische Hefe, zerbröselt (ca. 42 g)
3 EL Soja-Kokos-Joghurt*** (z.B. von Provamel)
1 EL Olivenöl

Steps:

  • Ofen auf 180°C Ober-|Unterhitze vorheizen.
  • Mehl, Chia, Salz & Guarkernmehl in einer großen Schüssel vermischen.
  • Den Rote-Bete-Saft in einem Topf leicht erwärmen. WICHTIG: der Saft darf wirklich nur lauwarm sein (idealerweise 35-38°C), sonst stirbt die Hefe und deine Brötchen werden steinhart. Wenn du unsicher bist, einfach mit einem Löffel am Handgelenk testen. Wenn es sich dort angenehm lauwarm anfühlt, ist es die richtige Temperatur.
  • Den warmen Saft in eine kleine Schüssel schütten und den Zucker und die Hefe hinzufügen. Gut rühren, bis die Hefe sich aufgelöst hat. 
  • Die Hefe-Saft-Mischung, den Joghurt und das Öl zu den trockenen Zutaten geben und alles zu einem Teig vermischen. Dann für 5 Minuten auf einer leicht bemehlten Fläche kneten, bis du einen flexiblen, leicht feuchten Hefeteig hast.
  • 12 runde Burgerbrötchen formen und auf ein mit Backpapier ausgelegtes Backblech legen. Mit einem Geschirrtuch abdecken und für eine Stunde an einem warmen Ort gehen lassen.
  • Nach der Gehzeit sollten die Brötchen sich sichtbar vergrößert haben. Jetzt für 12 Minuten backen.
  • Die fertigen Brötchen auf einem Ofenrost auskühlen lassen.

1 pound ground lean (7% fat) beef
1 large egg
½ cup minced onion
¼ cup fine dried bread crumbs
1 tablespoon Worcestershire
1 or 2 cloves garlic, peeled and minced
About 1/2 teaspoon salt
About 1/4 teaspoon pepper
4 hamburger buns (4 in. wide), split
About 1/4 cup mayonnaise
About 1/4 cup ketchup
4 iceberg lettuce leaves, rinsed and crisped
1 firm-ripe tomato, cored and thinly sliced
4 thin slices red onion

Steps:

  • In a bowl, mix ground beef, egg, onion, bread crumbs, Worcestershire, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper until well blended. Divide mixture into four equal portions and shape each into a patty about 4 inches wide.
  • Lay burgers on an oiled barbecue grill over a solid bed of hot coals or high heat on a gas grill (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill. Cook burgers, turning once, until browned on both sides and no longer pink inside (cut to test), 7 to 8 minutes total. Remove from grill.
  • Lay buns, cut side down, on grill and cook until lightly toasted, 30 seconds to 1 minute.
  • Spread mayonnaise and ketchup on bun bottoms. Add lettuce, tomato, burger, onion, and salt and pepper to taste. Set bun tops in place.
